For the Day 3 of Blogging Marathon Under the theme "Whole Grain Dishes" I am going to share an interesting and Delicious Penne Pasta(whole grain) recipe. This is the slightly adapted from RachaelRay's Summer Vegetable Pasta recipe. Few weeks back i bought Italian style Breadcrumbs from Walmart to fry Salmon for my kids. Other than that i dunno what to do with the bread crumbs, i simply used to make Oven Roasted Broccoli. When i saw this pasta recipe @ rachaelraysmag.com i was so much attracted as the recipe calls for Italian style bread crumbs, so without second thought i bookmarked it and tried few days back for my breakfast. I tweaked the recipe little as i lack zucchini, I used Mixed vegetable and also substituted basil with Parsley. The result was awesome, pasta without any sauce or blend if Indian Masala, simply sauteing with garlic,vegs n finally with the touch of Italian style breadcrumbs...very tasty n flavorful one...Generally i don't like cheese so i avoided that also...overall it was a super healthy n tasty breakfast. Great enough to kick starts one's day,do give it a try n let me know h it turned out to you....Now to the recipe...

Ingredients
- Whole grain Pasta 1 cupand 1/4 cup ( i used Penne Pasta)
- Red Onion 1 medium (finely chopped)
- Zucchini 1/4 cup(chopped)
- Sweet corn Kernels 1/4 cup
- Carrot 1small(sliced)
- Broccoli Florets 1/4 cup
- Green & Red Capsicum 2 tbsp each (thinly sliced)
- White Mushroom 1no.(thinly sliced)
- Garlic 1 (finely chopped)
- Extra Virgin Olive Oil 1 tbsp
- Salt to taste
- Pepper to taste
- Red chilli flakes 2 tsp
- Parsley 1tbsp(finely chopped)
- EVO Oil 1/2 tsp
- Garlic 1 no.(finely chopped)
- Italian Style Breadcrumbs 1/4 cup or less
- Cook Pasta as per Package instruction, wash in cold water n keep ready.
- Heat 1/4 tsp oil in a pan, then add garlic wait for few seconds then add 1/4 cup Italian Style Bread crumbs and roast till it turns golden n flavor comes...say for 1-2 minutes then transfer it a bowl.
- In the same pan heat 1tbsp oil and add garlic fry well then add red chilli flakes and saute it for few seconds.
- Then add onions and saute for a minute.after that add capsicum n other vegetables and saute for 1-2 minutes in medium heat (including corn).
- Cook covered for 1-2 minutes don not cook vegetables for long time,just saute till tender but not overcook maintain its crunchyness.
- Then add cooked pasta and stir fry until the moisture drains,add enough salt and pepper.
- Mix well and lastly add some fnely chopped parsley and give a mix and turn off the stove.
- That's it...Super Tasty n Healthy vegetable Whole grain Pasta ready.
- Transfer to the serving plate/bowl sprinkle generous amount of roasted Italian style breadcrumbs and Serve hot!.

What a wholesome dish. Love the pasta packed with nutrients of veggies and the Italian breadcrumbs should have highlighted the dish.

I thought you used Canon. :) Anyway, the reason I asked was because your clicks are always very bright and nice. :) I love pasta too but since most recipes I have tried have let me down, I avoid making them altogether. Your pasta looks delicious and very photogenic.
