Hope You all doing good and I m so so happy to meet(virtually) you all after a very long time. Today's recipe is a protein rich and filling Paratha with Silken Tofu and a super easy and tasty Cucumber Raita to go with. I made this paratha long back and this was the last recipe I prepared n clicked for blog before my knee issues. This Tofu Paratha recipe was slightly adapted from Show me the curry site. I tweaked to my taste. Paratha turned out so tasty and filling. I served with cucumber Raita and Moongdal curry /Moongdal Tadka. So satisfying and delicious lunch.
Before getting into the recipe few words about my friends. Really I missed my little space and my dear blog buddies a lot. I love my space and more addicted to blogging. And the first & foremost reason for my addiction is my blog buddies, really am so lucky to have such wonderful friends. Some of them are connected with me on FB and they never fail to enquire about me and my health in my absence. Really all their Prayers and Wishes made me much better and thank you good hearts for your Prayers and support. Because of my personal health issue I couldn't do it for the past few weeks but from last Friday I was feeling much much better, but my knee still facing the issue and today I got my knees tapped (like maavu kattu) so couldn't move or walk freely and supposed to take bed rest for some more days. But I want to divert myself and engage in some activity so started writing my post. Now off to the recipe...
Ingredients
- Whole Wheat Flour 2 cups + for dusting n rolling rotis.
- Silken Tofu / Soft Tofu 1/2 cup(mashed)
- Turmeric Powder 1/4 tsp
- Chilli Powder 1 tsp
- Garam Masala powder 1/4 tsp
- Cumin seeds 1/4 tsp
- Cilantro 1/4 cup(finely chopped)
- Salt as needed
- Oil 1 tsp
- Water to knead dough
Instead of cilantro you can also add a handful of chopped spinach or methi leaves.
Adjust masala or spices to your taste.
Instead silken tofu you can also try this paratha with mashed potato or with mashed moong dal.
- Now take wheat flour in a wide bowl, add salt, cumin seeds,chilli powder,garam masala and turmeric,mix well.
- After that add silken tofu n chopped cilantro, combine well and knead it to smooth dough using very little water.
- Add a tsp oil, knead to soft n smooth dough and cover it using a damp cloth and leave aside for 30 minutes or more.
- Then again sprinkle 1-2 tsp of wheat flour and keand the dough again for a minute and divide it to 8 equal lemon sized balls.
- On a well floured surface, take one ball n start rolling gently to 8-9" parathas.
- Do repeat the same procedure for remaining dough.
- Heat tawa/griddle,toast the parathas on both sides till turn light golden brown spots appear n puff up or until done...drizzle some oil on all around the parathas.
- That's it...Soft n Delicious n Healthy Tofu Masala Paratha ready.
Cucumber Raitha
Ingredients
- Yogurt/Curd 1 and 1/2 cup(beaten)
- Cucumber 1 no.(peeled n diced too small)
- Cumin seeds 1/4 tsp
- Salt to taste
- Cilantro 2 tbsp(finely chopped)
- Green chilli 1no.(finely chopped) - optional
- Tomato 2 tbsp(diced too small)
- Onion 1/2 of a small onion(thinly sliced)
Method
- Chop cucmber(remove the seed n center part),onion,tomato,cilantro n chilli.
- Take curd in a bowl, beat well add salt n cumin seeds mix well.
- Add all other things - cucumber, onion, tomato, cilantro...mix everything well.
- That's it...Tasty n super cool Cucumber Raita ready.
- Serve raitha with sprinkled chaat masala or cumin powder on top.(gives nice flavor n taste).
