Today's recipe is very quick and delicious Mango cake in less than 2 minutes. Yup, you can enjoy this super soft n yummy cake instantly with very less and basic ingredients along with some Mango pulp. Long back I bookmarked Eggless Mango Cake recipe in my dear friend Sobha's space. There are so many favorite recipes in Sobha's Good Food. And i am yet to try those delicacies. In that do list, I am so happy that I tried this Eggless Mango cake into a Mug Cake and also added few chocolate chips. The result was awesome, I tried more than 3 times to get the perfect recipe.
First time, I felt that sugar was little less and next time I tried adding little more sugar & with a couple of alterations I came up with this perfect Mango Mug Cake Recipe. I also added Vanilla Extract for flavor.

Instead of choco chips you can also add some nuts or dry fruits of your choice.
Instead of Mango Puree you can also add any desired fruit pulp like strawberry, blueberries, orange etc.

- All Purpose flour 4 tbsp
- Sugar 4 tbsp
- Baking Powder 1/2 tsp
- Baking Soda 1/4 tsp
- Salt a pinch
- Mango Puree 3 tbsp
- Oil 2 tbsp
- Milk 3 tbsp
- Vanilla Extract 2-3 drops
- Sprite (Lemon Flavor) 2-3 tsp(optional)
- Chocolate Chips 1tbsp or more.
- In a mixing bowl, add Mango Puree,milk,oil,vanilla extract and sugar mix everything well.
- Then in a another bowl, sift flour,baking powder, baking soda, salt combine well.
- Now add the flour mixture to the wet ingredients and mix gently, add sprite stir well and lastly stir in chocolate chips.
- Then spoon the batter to any microwave safe mug and Microwave in high for 90 seconds ( After 60 seconds remove from the oven and tap gently and again proceed further)and leave it for another one minute in oven.
- That's it...Delicious Mango Mug cake ready. Serve Warm without or with any Frosting or chocolate glaze.

ReplyDeleteOMG...so sorry dunno what went wrong with you. The sweetness depend on the mango, if ur mango didn't have much sweet then add little more sugar...But sorry I tried it even 2days back and we loved it. You can also use store bought sweetend mango pulp .

ReplyDeleteyes.,you can add either milk or mango puree. 2 tsp should be ok i guess! Or you can use lemon juice also. I haven't tried but hope it works better!

ReplyDeleteThis recipe looks great! Planning make few cup cakes for an upcoming birthday party at my house. Can I make this 2 days in advance and store it in an air tight container? Or should I refrigerate them? Won't they dry up if I refrigerate? Please advice!
I haven't tried cup cakes using this recipes, the MW metod are best to eat as soon as it is made. So If you want to make cup cakes I suggest my Mango Marble Cake. That you can make ahead and wrap it in a plastic wrap and put it in ziploc store in refrigerator.
