Right now kids liked the red paratha more, somehow am managing with dosa/Adai/tomato chapathi for dinner, once he get bored then he will ask for blue or some other color:)
Now coming to today's recipe Chicken Kuzhambu, again this is my Mom's version. Of her all non vegetarian preparations I love this kuzhambu n chicken curry more. Compared to vegetarian my mom is great in cooking NV recipes, all our relatives love her chicken recipes n meen kuzhambu.
I like to have this chicken kuzhambu with idly/dosa. Last Sunday made idly n this kuzhambu for our breakfast.
Ingredients
- Chicken 1/2 kg / 1 lb
- Onion 1 large or 2 medium(chopped)
- Tomato 1 no.(chopped)
- Ginger Garlic Paste 1 tbsp
- Green chilli 2 no.(slitted)
- Curry leaves 1 sprig
- Cilantro/Coriander leaves 8-10 stems(finely chopped)
- Mint leaves 3 sprigs(leaves only)
- Turmeric Powder 1/4 tsp
- Chilli Powder 1 and 1/2 tsp
- Coriander Powder 2 tsp
- Chicken Masala Powder 1 tsp(optional)
- Salt to taste
To Temper
- Oil 1 tbsp
- Mustard seeds 1/2 tsp
- Fennel seeds 1/4 tsp
- Cinnamon 1" stick
- Clove 3 no.
To Wet Grind
- Coconut less than 1/2 cup(shredded)
- Dalia/Pottu kadalai 2 tsp
- Khas Khas/poppy seeds 1/2 tsp
- Fennel seeds 1/2 tsp
Method
- Cut and wash chicken pieces and sprinkle little turmeric powder, mix and keep covered.
- Grind coconut, daila, poppy seeds, fennel seeds using little water to a smooth paste and keep ready.
- Heat oil in a pressure cooker, add the tempering ingredients one by one and saute it then add green chillies and curry leaves saute it, then add onions and saute for a minute.
- And then add ginger garlic paste and saute until raw smell leaves.
- Now add chopped tomato and saute until soft and mushy.
- After that add chicken and turmeric powder and saute for 3-4 minutes.
- Then add dry powders-chilli, coriander, chicken masala and stir fry for 2 minutes and add the ground paste and stir well.
- Now add enough water and salt, chopped cilantro n mint leaves mix well and close the lid and pressure cook for 2-3 whistles.
- Once done wait till pressure cools down, that's it Tasty Chicken Kuzhambu ready.
- Serve hot with idly/dosa or steamed rice.
Notes:
Adding chicken masala powder is optional, my mom never used store bought chicken masala powders but i add it for additional flavor and taste :)
I used Aachi or Shakthi Chicken Masala Brands
After pressure cooking, if u feel your kuzhambu bit thin in consistency, due to excess chicken moisture, just cook in medium heat uncovered till it reached its desired consistency.
Adjust spices to your taste, this is little spicy kuzhambu.
Instead of dalia/pottu kadalai u can also use cashew nuts(4or5 whole cashew nuts).

ReplyDeleteIt is an excellent recipe. I made it today with a whole chopped chicken and i just adjusted the spices for the quantity of chicken. I ddnt have pottu kadalai ans so I substituted with cashews. It was very tasty!!
