Palak Paneer or Indian Cottage Cheese/Paneer in Spinach Gravy is a North Indian Side dish that is loved by most of the people around the world. It is also one of the most Popular Vegetarian Restaurant Menu. I have tried few varieties of spinach gravy with
Potato(Aloo Palak), cauliflower(Gobi Palak), channa(channa Palak),
Tofu(Tofu Palak) and Paneer. Of all the recipes I loved this Palak/Spinach curry a lot. This is a very mild palak/spinach gravy without any fancy masala and more ingredients. I got this recipe from my Neighbor Aunt. I have tried this recipe a couple of times and everytime it turned out awesome. This Palak Paneer can be made in a jiffy, this is a must try recipe for those whole love spinach and paneer.

Method
- First wash spinach thorughly in running water, then chop it roughly and keep ready.
- In a wide vessel, add chopped spinach, garlic, ginger and green chilli, sugar and sprinkle some water(1/4 cup) and cook for 4-5 minutes.
- Once it turned soft and tender turn off the stove and allow to cool for a while.

- Now add the ground spinach paste, little water(1/2 cup) and enough salt and bring it to half boil(cook in medium heat without closing the kadai with lid).
- Once it starts to boil, add the cubed paneer pieces and cook for another 3-4 minutes.
- That's it...Delicious Palak Paneer ready.
Notes:
Adding sugar helps to retain the fresh green colour.
I did not add cream or half and half, but if you want can add 2-3 tbsp in the end.
With the same spinach gravy, instead of paneer you can also add cooked potato/aloo, roasted tofu, cooked channa.
