Peanut Burfi Recipe
Last Friday I was preparing the list of the recipes that I wanted to cook and post before this Diwali. For each recipe I lack one or more ingredients and was upset and wondering what I can make with the available ingredients at home. Luckily, on that day V was at home and he suggested this Peanut Burfi that requires only 2 key ingredients. He also told that my Mil makes best peanut burfi and peanut ladoos with jaggery. Since i don't have jaggery that time I took the burfi idea and prepared this Peanut Burfi instantly. These Peanut burfis are very simple, quick and very delicious and addictive too. I added little milk, since i did not have the patience to wait till the sugar melts. Milk did the job easier and faster and also burfis were rich and delicious. This burfi needs only 15 minutes or less time and can be made instantly, so why are you waiting for? go ahead and make this peanut burfi for this diwali and share with your family and friends. Peanut Burfi Recipe

Makes  12 burfis
Ingredients
  1. Raw Peanuts   1 cups
  2. Powdered Sugar   1 and 1/4 cup
  3. Cardamom powder   a pinch
  4. Milk   1 tbsp(warm or at room temp.)
  5. Sliced Almonds   for garnishing
Method
  • First Powder the sugar, cardamom and keep ready. Grease a plate or tray with ghee or oil and keep aside.
  • Then heat a pan, dry roast peanuts for 4-5 minutes in medium heat or until it turns light golden brown and flavor comes. 
  • Then cool for a while and grind it to a fine coarse powder and keep ready.
  • Now to the same pan, add ground peanuts, powdered sugar, milk and cook in low-medium heat.
  • Keep stirring and initially the peanut-sugar-milk mixture will be liquidy, don't panic and keep stirring.
  • After 5-6 minutes it will turn slightly thick and keep stirring constantly.
  • Then after few minutes of stirring, peanut mixture will turn thick like halwa and start leaving the side of the pan.
  • That time switch of the stove and remove the pan from heat and pour the mixture immediately to the prepared tray.
  • Top it with some sliced almonds or chopped nuts. While its still warm make a mark to slice.
  • Once it cooled completely slice it and serve.
Notes:
I powdered 3 cups of sugar with 6-7 cardamom and used it as needed in my burfis.
After adding milk if you feel its too liquidy then add 1-2 tbsp of milk powder or mawa powder. I added more than 2 tbsp so it turned liquidy
and i adjusted with mawa powder. So i here i given only 1 tbsp milk.
Do not decrease the sugar quantity, else the burfi will be slightly bitter.
