Poriyal is nothing but an Indian style stir fried vegetables with spices, dal and sometimes coconut. Each State of South India has different names to it, Tamil Nadu it is mentioned as Poriyal, Keralites make similar stir fry with coconut and it is Thoran. Andhra and Kanadigas call it as Vepudu and Palya (sorry if I am wrong). Whatever the names are, the dish is prepared more or less the same way and it is equally tasty and served as a side dish with Rice Meal. I love all varieties of poriyal and it is must at our home. Beet Root/Beets Poriyal is my favorite side dish with Curd Rice/Thayir Sadham and Sambar Sadham.
Amma usually makes Beet root poriyal with shredded beets but, I prefer the chopped ones. Though it is the same vegetable but, it gives different taste when shredded. Beet Root Poriyal with coconut is my favorite, the coconut gives you nice flavor and taste to the dish, particularly the fresh shredded coconut. Mostly I prefer to add cooked dal instead coconut but, with beets I do not compromise and add at least 1-2 tbsp of shredded coconut. Mr.V was a picky eater he has lot of restriction but slowly after out Marriage I did not give him a choice and also no way for him he has to eat whatever I cook. I do not force him to eat upma but, I force him to eat veggies/greens. Compared to V, my kids are best they eat more vegetables and greens. Ok enough stories and off to the recipe...
