Egg Paratha are my kids favorite dish and I make it often for their breakfast. It is a simple dish but quite filling and delicious. Egg Roll is nothing but egg paratha wrapped with some fresh vegetables, sauces and chaat masala. This Egg Roll is one of the popular street food of North India. Very simple and easy to make kids friendly recipe, not only kids this is perfect for adults too.
Last week, I made these Egg rolls as an after school snack for my kids and they loved it to the core. Egg rolls tastes great when served warm and immediately after rolling. You can also use green chutney for extra spiciness.
Slice or julienne vegetables and keep ready. Beat egg with salt and pepper and keep aside.
Egg Paratha Method 1 :
Heat a tawa, drizzle some oil pour the beaten egg cook for a minute, then keep the paratha over the egg and cook for few seconds,
Then flip the paratha, drizzle some oil or butter or ghee in around paratha and cook for few seconds and cook both sides for few more seconds by pressing the paratha and that's it egg paratha ready.
Method 2 Egg Paratha :
First cook paratha on one side and to the cooked side, crack the egg directly and using a fork spread it gently, if desired sprinkle some crushed pepper.
Using a forecep flip the paratha gently, pouring the egg mixture to the tawa and keep the paratha over it. cook until done on both sides. that's it egg paratha ready.
How to Make Egg Roll/Wrap :
To the one end of the egg paratha, keep the sliced vegetables, drizzle some sauce, sprinkle chaat masala, crushed pepper, some lemon juice and cilantro. Start rolling tightly from one end and wrap half of the roll with napkin or butter paper or foil paper and serve immediately.
That's it Egg Roll Ready to relish.

Method

- Egg 2 no.
- Onion 1 no.(thinly sliced)
- Capsicum 1/4 cup(sliced)
- Tomato 1 small(sliced)
- Cucumber 1 small(sliced or julienned)
- Chaat Masala as needed
- Fresh Ground pepper as needed
- Tomato Ketchup 2 tbsp
- Chilli sauce as needed
- Lemon juice 1/2 tsp
- Cilantro few finely chopped to garnish
- Salt to taste
- Oil to toast egg roll
Slice onion and other vegetables and keep ready.
To the sliced onion, add a pinch of salt and sugar and keep aside, before adding it to the roll just squeeze the excess moisture and add to the wrap.(adding salt and sugar helps to reduce the pungent smell and strong taste).
In a medium size bowl, crack egg beat well and add some salt and crushed pepper, mix well and egg mixture is ready to make egg roll.
Egg Roll Method 1:
Now heat a tawa, drizzle some oil and pour the beaten egg over the tawa and spread gently and cook for a minute.
Then place a paratha over the egg and cook for few seconds and then flip the paratha and cook for few more seconds.
That's it egg paratha is ready to make roll/wrap.
Take egg paratha in a plate and add some sliced onions, capsicum, tomato and cucumber and top it with some sauce, chaat masala, pepper powder and finally some lemon juice and cilantro.
Now roll the paratha tightly and wrap half of the roll with napkin or butter paper and serve immediately.

Heat a tawa, cook paratha and crack the egg directly to the paratha and if required sprinkle some fresh ground pepper, using a fork spread the egg gently all over the paratha and cook for few seconds.
Then using a forceps flip the paratha and cook for another minute and that's it egg paratha ready.
Take egg paratha in a plate and add some sliced onions, capsicum, tomato and cucumber and top it with some sauce, chaat masala, pepper powder and finally some lemon juice and cilantro.
Now roll the paratha tightly and wrap half of the roll with napkin or butter paper and serve immediately.
Notes:
For making paratha, you can use All Purpose flour or wheat flour or both, I used 3/4 cup of wheat flour and 1/4 cup of All purpose flour/maida.
I used Hot and sour sauce for the roll.
You can also add some finely chopped onion and green chilli to the beaten egg.
Use any desired vegetables for rolls, you can use cabbage, carrot, other colored capsicum also.
