Akki Roti Recipe
Akki Roti is a popular Breakfast recipe in Kannadiga Cuisine, Akki Roti is made out of rice flour, a flavor rich tasty rotis just like Ragi Adai/Roti. This recipe was introduced to me by my neighbor sister in India from whom I learnt to make Restaurant Style Aloo Gobi, Channa Masala, Potato Curry etc. She did graduation in Home Science and very much interested in cooking multi cuisine recipes. I make this Akki Roti often at home and thought I have shared this recipe during my initial blogging days but I didn't. So, Few months back when I cooked this for our weekend breakfast quickly took some pictures and finally today writing this post :)

Now with much improved technology and internet usage we can learn and develop knowledge about our interested topic or anything,  but Seventeen years back when there was not much internet facility like now or we don't have that facility in our home she is my only source of knowledge about cooking other cuisines. Though my Mom is my best cook & teacher she doesn't know beyond south Indian or our tamil recipes. Only through our neighbors we used learn and try different recipes. Then and now we are blessed with good hearted neighbors who love and support us like their own family. We don't have good relatives but instead theres very good people around us. Now off to the recipe..
Akki Roti Recipe
Akki Roti Recipe

Makes 4
Ingredients
  1. Rice Flour   1 cup
  2. Onion   1 med(finely chopped)
  3. Green chilli    3 no. or to taste(finely chopped)
  4. Ginger   1 tsp(finely chopped)
  5. Cilantro   1/4 cup(finely chopped)
  6. Hing    1/4 tsp
  7. Salt   to taste
  8. Oil   as needed
Method
  • First in a sauce pan add 2 cups of water and heat it, no need to boil just heat it.
  • In a mixing bowl, add rice flour, hing, salt and mix well and to it add finely chopped onion, green chilli, ginger, cilantro and mix well.
  • Now using hot water knead it to a soft and non sticky dough. Add water little by little.
  • Once dough drizzle 1/2 tsp oil over the dough and keep it aside.
  • Heat a tawa, when it getting hot grease a banana leaf or foil paper or butter paper.
  • Divide the dough into 4 equal balls, and take a one ball in a greased foil paper and flatten it gently to 1/4 inch thick disc/roti.
  • To the hot tawa, carefully transfer the shaped roti by inverting the foil paper over tawa, wait for few seconds then gently remove the foil paper and drizzle oil around the roti and cook it covered for a 1-2 minutes.
  • After that remove the lid and flip to other side and cook till it turns golden brown and crisp.
  • Once done, remove the akki roti from the tawa and serve hot with chutney or pickle.
Notes
Do not use boiled water, just heat it and use hot water.
You can also add grated carrot and cabbage to the roti for a more healthier version.
Rotis are soft when it is served hot/warm.
I have made this Akki Roti with regular rice flour & idliyappam flour too. Both rotis were same and tasted soft.

Chop vegetables finely and heat water to knead dough.
 Mix everything with the rice flour and using hot water knead it to a soft non sticky dough.
 On a greased foil paper shape the rice flour ball to a flat disc, make 3-4 holes in the shaped disc and cook on the hot tawa.
