This Egg Bhurji/Egg Sabzi is one of my favorite side dish for rotis. I learnt this recipe from one of my friend. So easy and quick side dish for rotis, pooris and for bread sandwich too. Adding more onion gives nice taste and texture to this dish. The recipe as follows..
Ingredients
- Egg 2 no.
- Onion 1 large (finely chopped)
- Tomato 1/2 (finely chopped)
- Green chilli 3 no.(finely chopped)
- Curry leaves few
- Turmeric Powder 1/4 tsp
- Chilli powder. 1/4 tsp
- Mustard seeds 1/2 tsp
- Fennel seeds 1/2 tsp
- Coriander leaves few (finely chopped)
- Salt as needed
- Oil 1 and 1/2 tbsp
- Crack and pour the eggs in to bowl and mix gently and keep aside.
- Heat oil in a non-stick pan, mustard seeds and fennel seeds allow to pop and add onions, green chillies and curry leaves.
- Saute well until onion get golden color.
- Now add chopped tomatoes saute for a minute and add turmeric powder, chili powder and enough salt and fry well.
- Then add 1/4 cup water and allow to boil.
- once starts boiling, Pour the egg to the onion-tomato masala and stir well.
- Cook in medium heat ,stir well and cook for 2-3 minutes or until egg gets scrambled n cooked well.
- Add some chopped coriander leaves, sprinkle little curry powder (optional)stir well and turn off the stove.
- Egg Bhurji ready.
Do not beat the eggs, just mixing is enough.
Instead of egg you can also use grated Paneer/cottage cheese with the same recipe.
You can omit green chili and use chili powder alone
I forgot to add finely chopped Green pepper/capsicum, if you want, add along with onions n saute it.
