Simple Vanilla Cake Recipe / Vanilla Sponge Cake Recipe


            This is a simple vanilla sponge cake Recipe. The recipe requires simple basic ingredients and method and the result is a spongy soft and yummy vanilla cake. You can serve this cake as a plain tea cake as a snack along with some chai/coffee or serve it with desired frosting and serve as a Dessert. Either way the cake tastes delicious.
Other Variations - This recipe can be made rich with adding mixed nuts, tutty-fruity, dry fruits etc on the top or mixed with cake batter also.

Ingredients
  1. All Purpose Flour   1 and 1/4 cup
  2. Egg      2 no.
  3. Milk     1/2 cup
  4. Sugar    1 cup(fine granulated)
  5. Baking Powder    1 and 1/4 tsp
  6. Oil   1/3 cup
  7. Vanilla extract   3/4 tsp
Method
Preheat oven(convection oven) to 350 F. Line a 8 inch cake pan with parchment paper and grease the paper and sides of the pan well(using baking spray or butter) 
Sift the flour and baking powder .
In a large mixing bowl, add sifted flour and baking powder ,in a another small bowl with an electric mixer, beat sugar and eggs together until slightly thickened,( about 1 minute)
to this add milk, oil and vanilla, mix gently with a spoon and add to the flour and beat for another minute, just until the batter is smooth and creamy. 
Don't over beat. Pour batter into the prepared baking pan. 
Then Bake in Preheated oven for 30-40 minutes or until the top are golden brown and toothpick or knife inserted in to the center of the cake should came out clean.(for me it took 32 minutes)
Loosen the sides of the cake from the pan with a thin knife, then turn out onto a rack and peel off the paper.
Let it cool completely.
After done slice it and enjoy!


    This basic vanilla cake can be enjoyed with butter cream frosting. I tried orange butter cream frosting. 

Orange Butter Cream Frosting
Ingredients
  1. Softened Butter   1/2 cup
  2. Confectioner's sugar  or Icing sugar   1 and 1/2 cup
  3. Fresh Orange juice    2 tbsp
  4. Vanilla extract   1/2 tsp
  5. Orange zest   1 tsp
  6. Orange food color    2 drops(optional)

Method

  • In a mixing bowl, using electric mixer cream butter until light and fluffy. 
  • Beat in confectioner sugar, vanilla, orange zest and orange juice. 
  • Add enough orange juice to get desired frosting consistency.

    1. Yes...to the same recipe instead of 2eggs add- 1tbsp Vinegar, 1/2tsp Baking soda.
      If u want u can also add 3-4 tbsp of melted butter.
      U have to add the baking soda along with dry ingredients n mix melted butter with milk, oil n vanilla n sugar mix until sugar dissolves n add this to flour mixture n finally add vinegar.

  4. Tried this cake recipe yesterday and it came out very soft and delicious. Simple recipe but the end result is amazing. Hubby liked it very much. Even today the cake is very soft and same like yesterday. Thanks for sharing the recipe.

  8. Hi Sangeetha mam, I tried your cake, it came out very spongy. But had dominating smell of egg. Even then we liked it a lot. What may have gone wrong?

    1. Thanks Mary for your feedback. May be you have over beaten the eggs or next time try adding little extra good quality Vanilla Extract .
