Aloo Bonda,My Hubby's favorite appetizer...my kids also like this yummy bondas.. Everyone has their own unique recipe...mine as follows...

Ingredients for Bonda Batter
- Besan flour 1 cup
- Rice flour 1/4 cup
- Chilli powder 1 tsp
- Curry Powder 1 tsp
- Salt to taste
- cooking soda a small pinch
- Jeera/Cumin seeds 1/2 tsp
- Hing 1/4 tsp
- Oil for deep frying
- Potatoes 3 no.s
- Onion 1/2 (finely chopped)
- Green chillies 2-3 no.s(finely chopped)
- ginger 2 tsp(finely chopped)
- Coriander leaves 1/4 cup(finely chopped)
- Curry leaves few
- Chana dal 2 tsp
- Mustard seeds 1/2 tsp
- Fennel seeds 1/2 tsp
- salt to taste
- Oil 2-3 tsp
- Pressure cook potatoes for 1-2 whistle then peel the skin and mash them nicely n keep aside.
- Heat oil in wok,add mustard seeds n fennel seeds wait till it pop and add chana dal .fry till golden brown.
- Then add curry leaves,ginger,green chillies and finely chopped onions,sprinkle some salt and saute nicely till onion turns pink.
- Then add the turmeric powder,mashed potatoes,enough salt and mix everything well and fry for 2 minutes.
- Lastly add chopped coriander leaves and mix well and fry for another minute and turn off the stove.
- Thats all ...potato filling preparation is over allow it to cool for sometime.
- when it get cools down,divide them in to equal portion and make small/medium lemon size balls n keep aside.
- Now take a mixing bowl,add besan flour,rice flour,chilli n curry powder,salt,hing,cooking soda,jeera and mix well and add water little by little n make it to a thick batter(thicker than baji batter) without any lumps.
- Heat oil in a deep bottomed vessel,when oil gets really hot...take one ball at a time n dip in the besan flour batter and drop carefully into the hot oil and deep fry till it turn golden brown on both sides.
- Repeat the same for all the potato filling and u can fry 4-5 at a time(based on the vessel ).
- Thats it...Yummy Aloo bondas are ready to serve hot.
- Serve hot with ketchup/chutney as a tea time snack.
