This is a combination of Indian spices with Chinese sauces. This is really a amazing combination...i use to make this type of fried rices often with any available vegetables..this time i have more capsicum and a bunch of spinach in my fridge, so tried with it. Very quick recipe... helped me a lot to pack my hubby's lunch box during his 6 am-3 pm shift. So quick n i can also stuff as many vegetables as possible. I tried with mixed vegs like carrot,beans,peas,cabbage,mushroom,capsicum or with any 2 available ingredients. U too Try this n enjoy !!!

Ingredients
- Basmati/Jasmine/Long grain rice 2 cups(cooked rice)
- Spinach 1/2 bunch(roughly chopped)
- Capsicum/Bell Pepper Red,Green,Yellow & Orange 1/4 each (striped)
- Garlic 3-4 no.s(finely chopped)
- Onion 1 medium (sliced)
- Spring onion -bulb 1/4 cup (sliced)
- Soy sauce 1 tbsp
- Green chilli sauce 1/2 tsbp
- White vinegar 1 tsp
- Sugar/Brown sugar 1/2 tsp
- Garam masala 1/2 tsp
- Cumin powder 1/2 tsp
- Red chilli flakes 1 tsp or to taste
- Pepper to taste
- Cashew nuts 1 or 2 tbsp chopped
- Salt to taste
- Oil 1 tbsp
- Sesame Oil 1/2 tsp(optional)
Method
- Heat oil in a sauce pan, add cahew nuts fry till it turns light golden brown and add garlic, onions and spring onions fry for a minute.
- Then add capsicum/bell peppers and fry for 1-2 minutes (not more than that).
- After that add chopped spinach and give a mix...then add dry powders and stir well.
- Now add the sauces,vinegar,sugar and stir for a minute ans add the cooked rice.
- Gently toss them or stir well,add enough salt,red chili flakes and Mix everything well and stir fry the rice with the Capsicum-Spinach mixture for 1 minute.
- Lastly add pepper powder and some chopped spring onion greens and turn off the stove.
- Thats it...delicious spinach capsicum masala fried rice is now ready to serve.
Note:
I used 4 colors of capsicum..if u don't have multi colors,you can try with any one color also.
If u have dark soy sauce, add that it gives nice color to the rice.
Traditionally the Chinese Fried Rice are made with Long grain Rice or Jasmine Rice but i here i have used Basmati Rice.
Adding sesame oil is optional but it gives real n nice flavor when it combined with Chinese sauces.
This time i did not add green chili sauce as i made this for my kids n also those are mini sweet peppers., so u can also try this way for your kids.
