This recipe was taught to me by my neighbor sister. She was a catering student n i learnt more restaurant style recipes from her. This recipe is masala stir fry of hard boiled potatoes.The original recipe was to fry the potatoes in butter but i used oil only. Ingredients
- Potato 1 lb
- Onion 1 medium sliced
- Cumin seeds 1/2 tsp
- Curry leaves few
- Chilli powder 1 tsp
- Turmeri powder a pinch
- Garam masala 2 tsp
- Amchur powder 1and 1/2 tsp
- Salt to taste
Method
- Boil the potatoes (90%) and do not make it too soft n mushy..hard boiled potatoes,peel the skin and cut into bite size pieces and keep aside.
- Heat 1-2 tbsp oil in a pan,add cumin seeds wait till it splutter then add curry leaves and sliced onions.
- Saute the onions for a minute and add the boiled and cut potatoes n turmeric powder.
- Fry the potatoes nicely ,once in a while gently toss them.
- Once the potatoes are nicely fried and turn little crisp n brown add dry powders(chili, garam, amchur) and enough salt.
- Mix everything well and fry in low heat till the masala leaves raw smell and the potatoes are nicely coated with the masala.
- Keep stirring and cook till the potatoes turn light crisp and turn off the stove.
- If u have some coriander leaves can add them now and leave it open in the stove..let it rest for few minutes.
- After that boiled potato fry is ready and serve as a accompaniment for rice/roti/puri etc.
You can also try this with baby potatoes.For kids,fry the potatoes(boil it fully) in butter,add less spices and pepper powder..definitely they will love to have them.

Love this potato fry...this will even taste great with plain rasam saadam...frying in butter for kids is also a nice idea...yum yum.
