Nutritional Benefits of Drumstick leaves: Drumstick leaves are of great value as sources of acrotene, calcium, phosphorus and vitamin C.The leaves serve as a tonic for infants and growing children. For better results, juice should be extracted from leaves, filtered and mixed with milk. This mixture becomes an excellent tonic for healthy and strong bones and for purifying bloodstream.It will also help them overcome sluggishness of the uterus, facilitate easy delivery and reduce post delivery complications. A vegetable prepared from leaves increases breast milk after child birth. Drumstick soup made with leaves and flowers as well as boiled drumsticks are highly valuable in preventing infections of all kinds such as that of the throat, chest and skin.Fresh leaf juice applied with lime juice is useful in the treatment of pimples, black heads and keeps one's face fresh.

Ingredients
- Drumstick leaves 2-3 cups
- Onion 1 Big(finely chopped)
- Dry red chillies 2 no.s(broken in to pieces)
- Shredded Coconut 2 Tbsp
- Chana dal 1 tbsp
- Urad dal 1 Tbsp
- Mustard seeds 1/2 tsp
- Coconut Oil 2-3 tsp
- Salt to taste
- Take all the drumstick leaves in a vessel sprinkle little water and cover it with a lid,cook for 12-15 minutes or till the keerai gets cooked.(do not add more water n don't drain the excess water also) and keep aside.
- Heat oil in wok,add mustard and chana dal,fry till chana dal gets golden brown .
- Then add finely chopped onions,broken red chillies and saute lightly.
- And add the cooked murungai keerai ,enough salt and stir fry for a minute( and add shredded coconut and stir well for a minute).
- Murungai keerai poriyal is now ready to go with any variety rice and also it suits with hot plain rice with ghee.
Method 2:
For Method - only one Extra ingredient required - Cooked Toor Dal.
For that, take 3-4 Tbsp toor dal, wash and soak for 20-30 minutes. Then cook on stove top with enough water, pinch of turmeric powder until dal is cooked soft but not mushy.
- Heat oil in a pan, add mustard seeds allow to splutter .
- And add chana dal, urad dal fry till golden brown, then add the dry chillies and chopped onions & garlic(optional).
- Fry the onion for a minute and then add drumstick leaves, mix well.
- Add enough salt n stir well then add 1/4 cup water and close it with a lid and cook for 10 minutes or until keerai is cooked well.
- After that open the lid and give a gentle stir and now add cooked Toor dal/moong dal and stir fry for a minute.
- Lastly add shredded coconut, mix everything nicely and switch off the stove.
- That's it...healthy n tasty Drumstick leaves poriyal ready.

ReplyDeleteExcellent dish. One question, after washing the drumstick leaves, they tend to clump up together and do not separate much. You have any tips for that? Will be valuable to know how you got that crumbled look. That is where I am trying to reach! meera
ReplyDeleteThank you! Yes drumstick leaves will tend to clump up, use colander to rinse the leaves then use it in cooking. Hope this helps!
