Now-a-days my kids love poha more and they feel more comfortable ..for me also its easy n quick to prepare..its really a very tough job for me to feed them vegs..now they become Toddlers and started saying big "NO" to all vegs n greens. Particularly a strong hatred towards Broccoli,becoz of its green color..Sanjay use to say its green color Mummy, so it will be spicy.. i don't want that :) So i have to try n experiment new varieties n combo to feed them easily.Mango poha n Spinach Poha were fruitful,they loved it ..so this time tried lemonee poha with broccoli florets ,nuts,raisins n few mini sweet peppers. Result was awesome n they eat broccoli also. Hope you too like this recipe...
Ingredients
- Poha 1 and 1/4 cup
- Broccoli ! cup(cut in to very small florets)
- Onion 1 meidum(finely chopped)
- Dry red chillies 2 no.s(broken)
- Mustard seeds 1/2 tsp
- Cumin seeds 1/4 tsp
- Chana dal 1 tbsp
- Urad dal 1/2 tbsp
- Cashew nuts 7-8 no.s
- Raisins 6-7 no.s
- Lemon 1 no.
- Turmeric powder 1/4 tsp
- Mini Sweet Peppers red n orange color each 1no.finely chopped(optional)
- Salt to taste
- Oil 1 tbsp
- Wash Poha ,drain the water completely and keep aside.
- Cut lemon and squeeze the juice,add few tbsp water mix n keep aside.
- Heat oil in a pan,add mustard n cumin seeds, wait till pop and add chana dal,urad dal,cahsewnut n raisins n fry them lightly to golden color.
- Then add curry leaves,dry red chillies n fry lightly n add chopped onions and saute till translucent.
- Now add finely chopped red n orange Bell Peppers and stir for few seconds and add broccoli florets n turmeric powder.
- Stir fry the broccoli for 3-4 minutes or till done(can cover n cook for 1-2 minutes).
- After that add ,add the drained poha,enough salt and stir well and fry for a minute n turn off the stove.
- After a minute,add lemon juice n some finely chopped cilantro n mix everything well.
- Thats it..Broccoli Lemon Poha ready.
Note:
In the same recipe, instead of poha/flattened rice u can also use any cooked rice(basmati rice,long grain rice,sona masoori). For rice increase one chilli n also a tsp of lemon juice.
Instead of dry red chilli u can also use chopped green chilli/jalapeno.
If u want u can also add some finely chopped ginger..
Definitely Poha will remains soft n have fresh lemonee flavor for lunch also.

it is a complete meal...looks delicious, I also struggle in making my kids eat vegetable what I do is I make fried rice and put some shredded vegetable.

Interesting twist' never added any vegetables to lemon rice, guess...once I used beans and carrot. One of my friend got furious for that...poor me:(
