Arisi Paruppu Sadham is one of the popular Tamil Nadu delicacies.This is so nutritious and easy recipe. Quick one pot meal which suits for a perfect lunch box menu..Kathirikkai/potato/Vazhakkai/ avarakkai varuval are the best combos..i made Kathirikkai/Brinjal varuval with Arisi Paruppu Sadham. This time i tried this Arisi Paruppu Sadham with adding some cut raw mango pieces to it. Mango and dal combo was super and rice tasted so yummy .Today will see both recipes...
Ingredients
For Arisi Paruppu Sadham/Dal Rice
- Rice(sona masoori) 1 and 1/2 cup
- Dal 3/4 cup
- Onion 1 no.large(sliced)
- Tomato 1 no.medium(diced)
- Mango 1/2 (cut in to bite size pieces) optional
- Curry leaves 1-2 sprigs
- Dry red chilli 2 no.s(broken)
- Green chillies 4-5 (slitted)
- Sambar powder or Kuzhambu Milagai Thool 1 and 1/2 tsp
- Rasam Powder 1 tsp
- Turmeric powder 1/4 tsp
- Mustard seeds 1/2 tsp
- Cumin seeds 1/2 tsp
- Fennel seeds 1/2 tsp
- Hing powder 1/4 tsp
- Salt to taste
- Few finely chopped coriander leaves
- Oil/sesame oil/ghee 2-3 tbsp
Method
- Wash rice n dal ,soak it together for at least 30-40 minutes.
- Heat oil/ghee in a pressure cooker, add mustard seeds, jeera, fennel seeds and wait till it splutter.
- Then add hing powder, dry red chillies, green chillies n curry leaves fry them lightly and followed by sliced onions.
- Saute the onions for 1 minute and then add mango pieces(optional) n tomato and saute till tomato gets soft but not mushy.
- Then add enough water and salt to cook rice n dal and add sambar powder, rasam powder
- When it starts boiling add soaked n drained rice and tuvar dal stir well and add some finely chopped coriander leaves.
- Close the cooker n cook till 1-2 whistles. wait till pressure cool down.
- Then open the cooker n give a gentle mix .
- Thats all yummy n nutritious Arisi Paruppu Sadham is ready .Serve with any desired fry or simple pickle.
Kathirikkai varuval is also simple recipe but very tasty n flavorful.since i used freshly ground spices for this fry.
Ingredients For Kathirikkai Varuval
- Brinjal/Kathirikkai small purple brinjal 7-8 no.s
- Onion 1 medium(thinly sliced)
- Mustard seeds 1/2 tsp
- chana dal 1 tsp
- Urad dal 2 tsp
- Curry leaves few
- Turmeric powder a pinch
- Salt to taste
- Oil 1 tbsp
To Roast n Grind
- Oil 1/2 tsp
- Chana dal 1 tbsp
- Dry red chillies 3-4 no.s
- Dry coconut powder 1 tbsp
- Coriander seeds 2 tsp
- Hing 1/4 tsp
- Sesame seeds 1/4 tsp
Method
Roast all the ingredients under the heading"to roast n grind" to light golden color and allow to cool completely ..then grind to little coarse powder n keep aside.
Wash n cut brinjals in length wise or to desired shape n size and rest it in water until start cooking.
Heat oil in a pan,add mustard seeds allow to pop n then add chana n urad dal fry till golden brown.
Then add curry leaves n onions n saute till onion turn pink.
After that add cut brinjal n turmeric powder,fry the brinjal nicely in medium heat for 3-4 minutes.
And now add the roasted ground powder n mix well,add enough salt and stir everything well.
Cook covered for 1 minute.and then keep stir frying the brinjals in medium heat till it turn dry n crisp.
Thats it Kathirikkai Varuval/Brinjal Fry is ready.Serve as an accompaniment of your choice.
I served this with Dal Rice/Arisi Paruppu Sadham

ReplyDeleteRice and Dal measure = 2 and 1/4 cup. I like Arisi Paruppu Sadham to be soft and slightly mushy so i use 5.5 cups of water and i use pressure pan for 1 whistle.
