Hope you all are doing good..After a very short break of 10 days i am back to blogging now. I took break as I am not feeling well and now I am ok with my health and happy to be back.
I am back with a sweet recipe,Malai Peda Classic Indian sweets. Pedas are me and my sister's favorite one..My Perima makes peda with fresh milk and we will fight each other to divide our share :) so funny days...My mom learnt from her and make it only on special occasions. we love it a lot. Malai Peda is little different in taste and is more rich, delicious than simple Doodh Pedas. Very easy and simple recipe and it taste divine and melts in mouth...so delicious one..Malai pedas can be made in different ways i made it with milk and condensed milk. I got this recipe from here.
Ingredients
- Milk 1 and 1/2 cup
- Condensed milk 14 oz
- Ghee 1 tbsp
- Citric acid/Vinegar 1/4 tsp or lemon juice - 1/2 tsp
- Corn flour 1 tsp (dissolve in 2 tbsp water)
- Food color a pinch(i used yellow + orange)
- Cardamom powder 1/4 tsp
- Nuts(badam/pistachio) for garnishing
- Take a heavy bottomed or non stick kadai,add 1 tbsp ghee and to it add milk n condensed milk .Bring the milk to boil
- Once it starts boiling add citric acid dissolved in water or 1 lemon juice stir well and allow to curdle.
- Then add the corn flour paste and keep stirring the mixture.
- Cook in slow-medium heat and stir the milk mixture continuously till the mixture gets thick n starts leaving the sides of the kadai/pan.
- Now add the cardamom powder and food color mix everything well.
- Turn off the stove and allow the peda mixture to cool for sometime and when it is warm start shaping the pedas to the desired shape n size.Garnish with nuts.
- Now the delicious malai pedas are ready to relish.
Notes:
You can make this malai pedas with paneer and condensed milk combo or ricotta cheese and sugar combos.
The above method will take nearly 1 hour for the entire process.(i cooked in low heat )
After adding lemon juice it will starts curdle lightly but you won't get any whey water, soon add corn flour paste it will helps to bind the curdling matter and keeps thickening...so you don't worry about straining the whey water...
