This is also my first attempt,few days back i saw Paneer kofta in spinach gravy recipe in TV cookery show.,was impressed and next day itself i tried this curry with some alterations which suits to my taste n also replaced paneer with mushroom koftas.The process seems to be more but very simple n easier onen a worth to give a try :) Usually my Hubby do not like any dumplings/ kofta in curry or kuzhambu but unexpectedly he loved this mushroom koftas and the gravy too. My kids thought this spinach gravy as coriander chutney and enjoyed with rotis. These koftas can also serve as an appetizer/snack my kids enjoyed as a snack. I fried mushroom koftas in Paniyaram pan,came out really good..
Ingredients
For Mushroom Koftas
- Mushroom 3/4 cup(finely chopped)
- Potato 1 small (boiled n mashed)
- Carrot 1/2 (shredded)
- Onion 1/2 (finely chopped)
- Cilantro 2 tbsp finely chopped
- Green chilli 2 no.s(finely chopped)
- Salt to taste
- Garam masala powder 1/2 tsp
- All purpose flour 2 tsp
- Bread crumbs 2 tsp
- Spinach 1 bunch(roughly chopped)
- Onion 1/2 (finely chopped)
- Green chilli 2 no.s(slitted)
- Salt to taste
- Oil 1 and 1/2 tbsp
- fennel seeds 1/4 tsp
- cinnamon 1" stick
- Clove 2 no.s
- Bay leaf 1 small
- Cardamom 1 no.
- Coconut 2 tbsp(shredded)
- Cashew nuts 6-7 no.s(soaked in warm water for 5 minutes)
- Poppy seeds/Khas Khas 1 tsp(soaked in warm water for 5 minutes)
- Fennel seeds 1/2 tsp
- Ginger 2" large piece
- Garlic 5-6 cloves
- Wash n wipe mushrooms n finely chop them n keep aside.
- Boil potato,peel n mash it n shred the carrot n keep aside.
- In a mixing bowl,mix mushroom,carrot,potato,green chilli and all other ingredients unnder"for mushroom Koftas" and mix everything well .
- Divide the portion in to 12 small balls n keep aside.
- Heat paniyaram pan/sauce pan n add few drops of oil on each hole n place the mushroom balls gently n cook in medium heat.
- After 3 minutes gently turn the koftas on each hole and cook till crisp n brown on all sides.
- Then remove the mushroom koftas n drain in paper towel n allow to cool lightly.
- Now in a wide vessel add 1/4 cup water n roughly chopped spinach ,a pinch sugar n cook till soft.
- Then allow to cool for few minutes and grind to a fine pulp n keep aside.
- After that grind all the ingredients under"to wet grind" to a smooth paste n keep aside.
- Now heat oil in a non stick vessel,add the tempering ingredients and fry lightly.
- then add finely chopped onions n slitted green chilli and saute till onion turns translucent.
- After that add the coconut-cashew nut paste and saute till raw smell leaves n add spinach puree along with necessary water ,salt n bring the mixture to boil.
- When starts boiling add thick curd/yoghurt n stir for 1 minute and simmer the spinach gravy for 2 minutes n turn off the stove.
- Now the spinach gravy is ready n add the mushroom koftas just before you serve.
- Enjoy the delicious mushroom koftas in spinach gravy with any Indian Breads.
This is a less spicy gravy..can add some more green chillies if you want it to be spicy.
As mushroom and onion has more moisture...don't keep it for long time just fry them soon you made the mixture. You can add more mashed potato also.
