Tapioca Masala / Kappa / Cassava Stir Fry


               Today's recipe is very simple and  easy tea time snack, Boiled Tapioca / Kappa stir fry. Once in a while I buy Tapioca for Vadai / Tapioca Vadai. But now-a-days I Prefer it simple just boiled Kappa with little sugar is more than enough for me. But V wanted to have it with some onions & masala. This is so easy to prepare and perfect for tea time munch. Particularly for this winter chill evening definitely we need something hot n spicy right?? As we are spicy lovers I added chilli powder and enjoyed it piping hot and served the left over as a side dish for Milagu Rasam Sadham. This stir fry even suits well as a side dish also. Try this n let me know how it turned out to You :) Now to the Tapioca Stir Fry..

Ingredients
  1. Tapioca   1 lb (peeled and boiled)
  2. Onion    1 medium(thinly sliced)
  3. Garlic    1 large clove(crushed)
  4. Green Chilli 2(finely chopped)
  5. Curry leaves     1 sprig
  6. Chilli Powder    1 tsp
  7. Turmeric powder   1/4 tsp
  8. Salt     to taste
  9. Cilantro     2 tbsp(finely chopped)
  10. Oil / Coconut oil    2 tbsp
  11. Mustard seeds    1/2 tsp
  12. Chana dal     1 tbsp
  13. Urad dal    1/2 tbsp
Method
  • Wash and peel the Tapioca skin, then cut in to halves or small pieces and put it in a pressure cooker add enough water and pressure cook them for 2-3 whistles.


  • Once done, drain the water and remove the thick center stem and mash the tapioca/kappa and keep aside.
  • Heat oil in a pan/kadai, add mustard seeds allow to pop and then add chana n urad dal and fry till golden brown.


  • Then add crushed garlic and curry leaves, fry lightly and add sliced onions and saute till it turns translucent.
  • Now add tapioca and turmeric powder and stir fry well.


  • Then add chilli powder and saute till the masala mixes well and raw smell leaves.
  • Stir fry for 1-2 minutes lastly add some finely chopped cilantro(I used dried cilantro leaves) mix well and turn off the stove.


  • That's it..Tapioca / Kappa stir fry is ready to serve.Enjoy Hot !!

Notes:
Frying in coconut oil, gives you the real authentic flavor.
You can also add some shredded coconut along with the cilantro and fry well. This gives nice flavor and taste.
Instead of chilli powder can use broken dry red chillies along with tempering .
