Today's recipe is Classic Indian Sweet, Kaju Katli Recipe / Kaji Burfi / Kaju Katri . Today November 10th is one of the memorable and important day in My life. Wanna share some sweet memories with you. Generally we celebrate all festivals, important days like Birthday, Anniversary etc with sweets to enjoy the day with our family. Like wise, today is one of the most memorable day, mine is a love cum arranged marriage :) Five years back on the same day, My parents accepted our love and promised us that they will Join us for ever. November 12th 2006 he was supposed to travel US for his Job. So he came to my home(from Chennai) on Nov 10th and talked to my parents and the conversation went long for about 2-3 hours but it was a happy ending :-)
Now coming to the recipe, I followed Raks Kitchen's recipe and made it easily this morning. I tried this 3-4 times before but every time I went wrong with the sugar syrup or with cashew powder. But this time it's a successful attempt and thanks a ton Raks for this recipe. One extra step I did which she did not mentioned, I sifted the cashew powder with mesh strainer. So that I got fine coarse powder :) As I made this today morning was in hurry and not able to get proper step wise pictures.

Ingredients
- Cashew 1 cup (leveled)
- Sugar 1/2 cup(heaped)
- Ghee 1 tsp or less ( to grease hands)
- Water 1/4 cup
- Grind cashew nuts in to a fine coarse powder using blender.
- Then sift them using mess strainer ( this is optional)
- Take a pan , add sugar and water and cook in medium heat .
- Keep stirring until sugar dissolves completely and get fine thread like consistency. To check this, take a small bowl with 1-2 tbsp of water and drop few drops of sugar syrup and it should form fine threads and is should not dissolved in water.(check the original recipe where she described with pictures).
- Then add cashew powder and stir well and keep stirring in low heat.
- Cook for about 3-4 minutes and when the mixtures starts bubbling and thick, wet your hands and take small piece and roll it u should be able to roll without sticky. that's the perfect consistency.
- Now turn off the stove and pour the cashew mixture to a greased plate or butter paper and wait for a minute and grease your hands and start kneading it gently like a dough.
- Then spread using your hands and place one more butter paper over the dough and roll like a chapathi using rolling pin.
- Then cut to your desired shape and Enjoy!!
Notes:
Its very easy to knead n roll with butter/Parchment paper. I did like what we do with cookie dough :)
I didn't take picture of the sifted cashew powder as I was in hurry just the sifted strainer alone :-)
If you feel your dough to be hard just add few spoons of milk and knead n roll. if its too sticky, add some corn flour and knead using ghee.

For cutting diamonds, first you can draw lines lightly with knife tip and then cut it so that you get your desired shape,but I must say your diamonds are looking good as well :) Nice tip on sifting the powder to get rid of the bits :)
