Mixed Vegetable Kurma Recipe / Green Veg Kurma Recipe


 Most of us love to cook and experiment new dishes right?? I too love and started my cooking from my school days itself. Being a working woman, my mom definitely need my help in the kitchen that too during weekdays busy morning hours, making both breakfast and lunch in a short time. I just started by helping by mom with cutting and doing small works in the kitchen, later learned to cook rice, sambar n rasam  and most of the typical south Indian recipes :)  After marriage, we came here- life in US is bit bore no hard work, more free time( before kids). That too for me, I left alone in home without neighbors, no one to talk around, V leaves home by morning 8.30 n used to come at eve 6.30 till that time I was alone. Now at least I know blogging but 4-5 years back I know nothing and even not much knowledge with computers/browsing etc as I am Math & Biology student didn't know much about these things. I had no idea about how people share these recipes online?? How people comment on their recipes?? how they share their pictures? & above all how to create a blog?? 
 With the help of google, slowly learned to use computers/Internet effectively. So whenever I need to try some new recipes I started browsing and my search would ended up in some of the popular blogs that time. I used to try recipes from their blog, but most of the blog which I was following during 5 years back were not active now and some blogs are not even available Or else I could comment/share their link now. Like that, I tried this green color kurma once and we liked it more but later forgot the recipe & recipe source. I tried to recreate but couldn't get that taste. And this time for Blog Hop Wednesday when I visited  Anusha's site "Tomato Blues"  I saw this mixed Vegetable Kurma, green color kurma which I tried long back from other site. Immediately, tried the recipe and the taste was almost the same which I made 4 years back. Thank you Anusha for sharing this recipe and sure a keeper recipe. Ingredients
  1. Carrots    1 no. small(finely chopped)
  2. Beans    15 no.s(Finley chopped)
  3. Peas    less than 1/4 cup
  4. Cauliflower florets   1/2 cup
  5. Broccoli florets    1/2 cup
  6. Onion    1 medium(finely chopped)
  7. Turmeric    a pinch
  8. Salt    to taste
To Temper
  1. Oil    1-2 tbsp
  2. Cumin  seeds    1/2 tsp
  3. Fennel seeds    1/4 tsp(optional)
  4. Clove    2 no.s
  5. Cinnamon   1/2" stick
  6. Curry leaves    1 sprig
To Wet Grind
  1. Cilantro    1/2 cup(tightly packed)
  2. Green chilli     4-5 no.s(adjust to your taste)
  3. Fennel seeds    1 tsp
  4. Poppy seeds    1/2 tsp
  5. Ginger    1 " pieces
  6. Garlic    3 cloves
  7. Coconut   2 tbsp(shredded)
  8. Dalia/pottu kadalai    1tsp
  9. Cashew nut    5 no.s (whole)
Method
  • Wash and chop all the vegetables and keep ready.
  • Grind all the ingredients under the heading" to wet grind" using little water to a smooth paste and keep aside.
  • Heat oil in a skillet, add the tempering ingredients and allow to splutter and then add onions and saute till it turns translucent.
  • Then add all the chopped vegetables and a pinch of turmeric powder and stir fry the vegs for 1 minutes.
  • After that add the ground paste and stir well and  saute for 1-2 minutes.
  • Now add 3/4 -1 cup water(adjust to the desired consistency) and enough salt ,mix well and bring to boil till raw smell leaves.
  • It's done...Flavor and taste rich Mixed Vegetable Kurma is ready. Enjoy with Hot paratha/puri/rotis.

Notes:
The above measurement will yield you a mild spicy kurma.
You can add any vegetables of your choice, potatoes will give nice taste will try it next time :)

  7. Good startup sangee. I was also in your situation once. :-) Left alone for a day in some forign country(though at your home :-p) is very bad thing and I know how it wud be.BTW, kurma is very colourful and aromatic. love it absolutely.
