Parsley Potatoes, very yummy and flavorful crispy potatoes can be served as an appetizer/snack or side dish. This is originally an Italian Parsley potato recipe but took the idea of steaming the potatoes alone and baked in oven whereas the original recipe sauted on stove stop. I simply steamed and mixed with mild spices and parsley and baked them until crisp and enjoyed. Now to the recipe..
Ingredients
- Potato/Aloo 4 medium
- Parsley 3 tbsp(fresh or flakes) i used flakes
- Garlic 2 cloves(finely chopped)
- Cashew nut 2 tbsp (chopped)
- Cumin Powder 1/4 tsp
- Kashmiri chili powder/Red chilli powder 1 tsp or less
- Salt to taste
- Olive oil 1-2 tsp
- Wash and cut the potatoes to desired size and shapes.
- And keep the cut potatoes in to steamer plate and steam it for 3-4 minutes.
- Pre Heat oven to 350 degree Fahrenheit.
- After steaming, add the potatoes to a mixing bowl, add all the other ingredients from "Parsley to oil" and mix everything well.
- Arrange these parsley potatoes in to a lined baking tray/dish and bake it for 12-15 minutes or until it turns crisp.
- Once done remove from the oven, allow to cool for a while and enjoy this crispy spicy parsley potatoes as a tea time munch or serve as a side dish.
Use any spices you like..
Baby potatoes, red potatoes can also be used instead of yellow one.
Instead of cashew nuts, you can also add peanut/pecans/walnut or any nuts u like :)
