Long long ago i tried this savory stuffed buns with cauliflower masala . Like my previous baking attempt this was also successful and am happy to share this here .
Ingredients
For the bun dough(Makes 24 buns)
- All Purpose Flour 2.5 cup
- Whole Wheat flour 2
- Salt 1 tsp
- Sugar 3 tsp
- Instant Yeast 1 packet( I used Fleischmann's Rapid Rise yeast)
- Oil 1/4 cup* +1 tsbp(for resting)
- Milk 1/2 cup* + 4 tbsp(for brushing)
- Water 3/4 cup-1 cup(adjust depending on flour type & quality)
Method
- Sift the flour and add it to a mixing bowl.
- Add salt, sugar and yeast mix well and then add oil and mix well.
- Now add milk and using enough water knead it to soft and pliable dough.
- Then cover the bowl with a plastic wrap and set aside in warm place for 45 minutes - 1 hour.
Meanwhile prepare Gobi stuffing
Ingredients
- Cauliflower florets 1 cup
- Onion 1 medium (finely chopped)
- Tomato 1/2 (finely chopped)
- Chilli powder 1/2 tsp
- Turmeric powder a pinch
- Garam Masala 1/4 tsp
- Cilantro few finely chopped
- Salt to taste
- Oil 1-2 tsp
- Fennel seeds 1/2 tsp
- Heat oil in pan, add fennel seeds and allow it to splutter.
- Then add finely chopped onions and saute until it turns translucent.
- After that add, tomatoes and saute till it turns soft.
- Now add cauliflower florets stir fry for a minute and chilli n turmeric powder,enough salt and stir fry for a minute.
- Then close it with a lif and cook for another 2 minutes.
- And add garam masala powder and stir fry the cauliflower for 2 minutes or until the moisture dries up.
- Lastly add some cilantro and turn off the stove.
How to make Stuffed Buns With Spicy Gobi filling:
- By an hour, the dough must have doubled in its size, punch down the air out and again knead for few minutes.
- Then divide the dough in to 24 equal portion and place it on a greased baking tray and again cover the tray with plastic wrap and allow it to rise for another 15-20 minutes.
- After that, take one ball and press gently press in the center or make a dent, and keep 1-2 tsp of filling and cover by bring all the edges together and press it tightly and roll the dough to a smooth bun and keep it in the tray .
- do repeat the same for remaining dough and filling, and arrange in on a lined or greased baking tray and then brush the stuffed and rolled buns with milk on top.
- Preheat oven to 375 degree Fahrenheit.
- Then baked them for 15-20 minutes or until the top turns light golden brown and done.(for me it took only 15 minutes ).
- Once done, remove from the oven, cool it for a while and again spread butter on the top and serve warm.
Notes:
You can use all purpose flour alone or whole wheat flour alone or the combo either way the bun will be soft and tasty. Depending on the flour type and quality you have to adjust the water to make dough.
The dough should be soft and pliable but not too soft and sticky.
If your dough is too sticky add couple of tablespoon of flour and adjust.
*Use warm milk or room temperature milk but not cold milk and warm water.
