Veggie Bread Fry - Baked !


             Do you Love Bread?? Yes , Then this recipe is for you ! Simple bread fry can be turned to a healthy and delicious one by adding vegs of your choice and lastly baked to get extra flavor and taste. Few days back i tried this spicy , tasty and yummy bread fry for my evening snack and loved it a lot. The bread didn't turn soggy or soft even after its cooled long time because it was baked !! I am sure definitely you will love this recipe and try for your tea time snack and enjoy !!

Ingredients
  1. Bread slices    4 no.s( i used whole grain whole wheat bread)
  2. Onion   1 medium( chopped)
  3. Tomato   1 small(chopped)
  4. Green Bell Pepper   2 tbsp(finely chopped)
  5. Carrot    1/2 (finely chopped)
  6. Peas    2 tbsp(i used frozen)
  7. Cabbage    1/4 cup(thinly sliced)
  8. Kashmiri Red chili powder   1 tsp
  9. Cumin  Powder     1/4 tsp
  10. Turmeric powder    a pinch
  11. Soy sauce   1/2 - 1 tsp
  12. Salt      to taste
  13. Parsley flakes     1tbsp
  14. Garlic     2 cloves (finely chopped)
  15. Fennel seeds     1/2 tsp
  16. Oil     2 tsp

Method
  • Cut bread slices in to small bite size cubes and keep aside.
  • Chop all the vegs and keep ready.
  • Heat oil in a pan, splutter fennel seeds and add garlic and fry lightly.
  • Then add onions and saute for a minute and add green capsicum and saute for 2 minutes.
  • After that add tomatoes and stir fry till turns soft but not mushy.
  • Now add carrots and peas stir fry for a minute then followed by cabbage and stir fry everything well for 1 minute.
  • Now add soy sauce, kashmiri chili powder, turmeric and mix everything well and fry for a minute.
  • Then add cumin powder and mix everything well and add cubed bread pieces and toss it well with the veggie masala.
  • If needed, sprinkle some salt and toss them well.
  • Lastly add the parsley flakes and mix everything gently and turn off the stove.
  • Preheat oven to 300 degree Fahrenheit
  • Transfer the veggie bread fry to a oven safe pan/dish, (sprinkle shredded cheese if desired ) and bake it for 5-7 minutes or until the bread pieces turns crisp and not burnt.
  • Once done, remove from the oven and Enjoy !!

Notes:
I didn't add cheese before baking but if you like you can add to the bread fry and bake it n enjoy. def it will give extra flavor n taste.
Kashmiri chili gives vibrant color to the dish but if u don't have can add dry red chili powder, add / adjust spices to your taste.
Instead of parsley ,cilantro can also be added to this recipe.
