Ingredients
- All Purpose Flour 2 cups
- Unsweetened Cocoa 1/2 cup
- Unsalted Butter 6 tbsp
- Egg 2 no.s
- Salt 1/4 tsp
- Baking Soda 1 tsp
- Sugar 1 cup
- Pistachio Nuts 1 cup
- Chocolate Chips 1/2 cup
I used 1/2 cup of pistachio only. i used roasted and salted one, i reduced the salt amount and it was ok.
If you have raw pistachios then slightly roast them in oven at 200 F for 8-10 minutes.
Use serrated sharp knife to get perfect prefect and texture.
Method
- Preheat oven to 350F. Grease with olive oil/butter or line(with parchment paper)baking tray and keep aside.
- In a medium bowl, combine together flour, cocoa powder, baking soda, salt and keep aside.
- Take a large mixing bowl, then cream butter and sugar until light and fluffy. Add eggs beat until well combined.
- Add flour mixture, and stir to form a stiff dough. Stir in pistachios and chocolate chips/morsels.Mix eveything well using hands or with the blender itself.
- Then transfer dough to a lightly floured surface shape to smooth dough and divide in to two equal portion, make about 12" long and 1 and 1/2"inch thick flattened log.
- Bake until slightly firm, about 20-25 ( for me within 17 minutes) minutes. Cool about 5-10 minutes.
- Reduce oven to 300 degrees.
- On a cutting board, using a sharp serrated knife, cut biscotti into 1-inch-thick slices.
- Then arrange the cut pieces in to the baking tray and keep back in to the oven and bake it for another 5-10 minutes.
- After that, remove from the oven and cool for a while and enjoy as such or with ice cream.
- My kids loved this a lot, real chocolaty treat , try this you will love it !!
