Chocolate Pistachio Biscotti

Today's recipe is Chocolate Pistachio Biscotti, biscotti is nothing but a twice baked cake or i can say crunchy/crispy cake. For the first time i tried baking biscotti and was half satisfied with the outcome. ie. i was fully satisfied with the taste but the appearance and texture was not perfect that's all due to my oven and also i don't have sharp knife :( Within 17 minutes the first bake was done more than it to be and because of blunt knife i couldn't cut them properly and somehow i managed to take pictures with some 4-5 biscotti.  The taste was exactly like the chocolate cake in addition crunchy bites of pistachio and chocolate chips(morsels). I used  mini morsels instead of chocolate chips. And here i want to thank Vardhini for her detailed biscotti step wise pictures. Ingredients
  1. All Purpose Flour   2 cups
  2. Unsweetened Cocoa   1/2 cup
  3. Unsalted Butter   6 tbsp
  4. Egg   2 no.s
  5. Salt    1/4 tsp
  6. Baking Soda   1 tsp
  7. Sugar     1 cup
  8. Pistachio Nuts    1 cup
  9. Chocolate Chips     1/2 cup
Notes:
I used 1/2 cup of pistachio only. i used roasted and salted one, i reduced the salt amount and it was ok.
If you have raw pistachios then slightly roast them in oven at 200 F for 8-10 minutes.
Use serrated sharp knife to get perfect prefect and texture.

Method
  • Preheat oven to 350F. Grease with olive oil/butter or line(with parchment paper)baking tray and keep aside.
  • In a medium bowl, combine together flour, cocoa powder, baking soda, salt and keep aside.
  • Take a large mixing bowl, then cream butter and sugar until light and fluffy. Add eggs beat until well combined.
  • Add flour mixture, and stir to form a stiff dough. Stir in pistachios and chocolate chips/morsels.Mix eveything well using hands or with the blender itself.
  • Then transfer dough to a lightly floured surface shape to smooth dough and divide in to two equal portion, make about 12" long and 1 and 1/2"inch thick flattened log.
  • Bake until slightly firm, about 20-25 ( for me within 17 minutes) minutes. Cool about 5-10 minutes.
  • Reduce oven to 300 degrees.
  • On a cutting board, using a sharp serrated knife, cut biscotti into 1-inch-thick slices.
  • Then arrange the cut pieces in to the baking tray and keep back in to the oven and bake it for another 5-10 minutes.
  • After that, remove from the oven and cool for a while and enjoy as such or with ice cream.
  • My kids loved this a lot, real chocolaty treat , try this you will love it !!

  19. Just posted biscotti too, maybe you could try that recipe, had no problems.....sometimes the recipe might be a problem too. Love the deep dark colour of the chocolate!
