Ridge gourd chutney is very easy and quick chutney, this goes well with all kind of tiffen varieties like Idly/dosa/Rav dosa/Pongal/Chapthi and even with plain rice also. This is one of my fav chutney but i never tried with its peel, as here we couldn't get that much fresh ridge gourds :( now to this simple recipe...
Ingredients
- Ridge gourd 1 no.s (medium length)
- Onion 1 medium
- Dry Red chilli 4-5 no.s
- Ginger 1/2" inch piece
- Tamarind pea sized small piece
- Coconut 1-2 tbsp(shredded)
- salt to taste
- Oil 1 tsp
- Chana dal 2 tsp
- Urad dal 1-2 tsp
- Oil 1/2 tsp
- Mustard seeds 1/2 tsp
- Chana n urad dal 1/4 tsp each
- curry leaves few
Method
- Wash and peel the outer skin from the ridge gourd and cut in to small bite size pieces and keep ready.
- Heat oil in a small pan, add chana n urad dal fry till golden brown.
- Then add ginger,dry red chilli and fry lightly and add onions n tamarind and saute for a minute.
- Now add chopped ridge gourd and stir fry for 3-4 minutes or until it turns tender not mushy.
- After that add coconut and turn off the stove.Let it cool completely.
- Then grind it to a smooth chutney and transfer it a bowl.
- After that, heat oil in a tempering pan and add the tempring ingredients and fry well and add it to the chutney.
- Mix everything well and Serve Ridge gourd Chutney along with Idly/Dosa.We enjoyed this chutney with Onion Rava Dosa :)
