Ridge Gourd Chutney


             Ridge gourd chutney is very easy and quick chutney, this goes well with all kind of tiffen varieties like Idly/dosa/Rav dosa/Pongal/Chapthi and even with plain rice also. This is one of my fav chutney but i never tried with its peel, as here we couldn't get that much fresh ridge gourds :(  now to this simple recipe...


Ingredients
  1. Ridge gourd   1 no.s (medium length)
  2. Onion   1 medium
  3. Dry Red chilli   4-5 no.s
  4. Ginger   1/2" inch piece
  5. Tamarind    pea sized small piece
  6. Coconut    1-2 tbsp(shredded)
  7. salt    to taste
  8. Oil       1 tsp
  9. Chana dal    2 tsp
  10. Urad dal    1-2 tsp
To Temper
  1. Oil    1/2 tsp
  2. Mustard seeds   1/2 tsp
  3. Chana n urad dal   1/4 tsp each
  4. curry leaves    few

Method
  • Wash and peel the outer skin from the ridge gourd and cut in to small bite size pieces and keep ready.
  • Heat oil in a small pan, add chana n urad dal fry till golden brown.
  • Then add ginger,dry red chilli and fry lightly and add onions n tamarind and saute for a minute.
  • Now add chopped ridge gourd and stir fry for 3-4 minutes or until it turns tender not mushy.
  • After that add coconut and turn off the stove.Let it cool completely.
  • Then grind it to a smooth chutney and transfer it a bowl.
  • After that, heat oil in a tempering pan and add the tempring ingredients and fry well and add it to the chutney.
  • Mix everything well and Serve Ridge gourd Chutney along with Idly/Dosa.We enjoyed this chutney with Onion Rava Dosa :)
