Hi all, hope everyone had enjoyed your holiday and celebrated the first day of 2012 with all your friends and Family. We too enjoyed the new year's day with new dresses, special menus and outing. For the past few days I was not able to post any recipe and also didn't check any other post of my blogger buddies. So sorry friends and sure will check each and every one of your recipes ASAP. Please do mail me your contact details and address as soon as possible. Now coming to today's recipe, Banana Choclate Chip Muffins. I baked these muffins long back but couldn't able to post in time for Bake Fest#2. Banana nut/chocolate muffins are my kids' favorite. I found the recipe Here and it was so delicious and perfect. We all loved it to the core. It stayed fresh and good in the fridge for one week. I reduced the sugar and butter quantity still it tasted so good and yummy.
Ingredients
Preheat oven to 350 degree Fahrenheit. Line a standard muffin pan with paper liners and keep ready.(12 cups)
Cut the ripe bananas in to chunks and blend it to a puree and keep aside.
Take a large mixing bowl, add flour,salt,sugar,baking soda n baking powder combine well.
In a small mixing bowl, add milk,one egg,vanilla,melted butter,olive oil and mix gently, do not over beat.
Now add the liquid mixture in the flour bowl and mix everything well.
Then stir in chocolate chips and now fill 2/3 to all the prepared liner and bake it to 20-25 minutes are until
done or until top turns light golden brown n tester comes clean or with some melted chocolate.
After that remove from oven and cool it in wire rack and Enjoy!!

Hi, following your blog for a few weeks for baked goodies. Interesting ones. Kudos!! In the above recipe, can we use melted butter itself instead of olive oil or what specific purpose does the olive oil serve?? thanks.
ReplyDeleteYes.,you can use melted butter(total 6 tbsp) for the recipe. I just cut lil' portion of butter,if you are ok with butter then you can use butter alone and skip oil.
