Brinjal Roast With Garlic N Fennel Seeds

       
 Recently 2-3 years back only i started eating Brinjal and now its became my fav veg. During my childhood days i am allergic to Brinjal then i stopped eating them completely. My mom's Brinjal Fry and Ennai Kathirikkai Kuzhambu is my fav and never got that taste when i tried. Garlic and Brinjal combination is really good for feeding mothers. Today's recipe one such recipe which my mom makes specially for my after my delivery. I made this roast with one full pod of garlic if u doesn't like more garlic you can reduce it too 4-5 cloves or to taste. But don't comprise with adding fennel seeds , really fennel seeds gives nice flavor n some unique taste to this Brinjal roast. This roast goes well with Sambar/Curd/Lemon rices. I loved it a lot. The recipe as follows..

Ingredients
  1. Brinjal    6 small(i used the green colored smaller ones)
  2. Onion     1 Medium (sliced)
  3. Garlic    1 pod(peeled n halved)
  4. Turmeric Powder     1/8 tsp
  5. Kuzhambu Milagai Thool      1 and 1/2 tsp or to taste
  6. Salt    to taste
  7. Cilantro     few finely chopped
  8. Curry leaves    1 sprig
To Temper
  1. Oil    1 tbsp
  2. Mustard seeds    1/2 tsp
  3. Fennel seeds    3/4 tsp
  4. Chana dal     2 tsp
  5. Urad dal    1 tsp
Method
  • Wash and cut brinjal in to lengthwise strips or to desired shape n size, and put in water until use.(this helps to prevent discoloration n to shed the seeds as well)
  • Heat oil in a pan,add the "tempering Ingredients" and allow ti splutter, fry chana n urad dal till golden brown.
  • After that add curry leaves and garlic, stir fry for few seconds and add sliced onions and saute for a minute.
  • Then add brinjal(drained completely) and turmeric powder and stir for 2-3 minutes.

  • Add kuzhambu milagai thool and continue stirring for a minute then sprinkle very little water, add enough salt and cook covered in medium heat until brinjal turns tender but not mushy.
  • Lastly add some cilantro, stir well and turn off the stove.
  • That's it...Spicy Flavorful Brinjal Roast With Garlic n Fennel seeds is ready to Serve.

Notes:
If u don't have Kuzhambu Milagai thool, add 1/2 tsp chili powder n 1 tsp Dhaniya/coriander powder.
Don't add more water, and also don't cut them to smaller pieces, both will makes your roast mushy.
