Cumin Flavored Peas Rice ~ Lunch Box Special !

            Today's recipe is quick lunch box special recipe. I used the same spice masala which i used for my Aloo Paratha. To make this rice more healthy and tasty i added some finely chopped carrots and green capsicum. The end product was so yummy and flavorful, simple potato chips or papad goes best with this rice. Adjust spices to your taste and for kids serve this rice along with raitha/plain yogurt. I made this recipe for CWS- Peas event but because of my illness and holidays i couldn't able to post it in time. Any way i have some more event to share this recipe :) I think this is one of the best way to use Left Over Rice.Now to this simple and healthy recipe...

Ingredients
  1. Rice     1 and 1/2 cup cooked (i used basmati rice)
  2. Peas     1/2 cup
  3. Onion    1 large(finely chopped)
  4. Capsicum     1/4 cup(finely chopped)
  5. Carrot     1/2 medium(finely chopped)
  6. Tomato     1 small(finely chopped)
  7. Cilantro     2 tbsp(finely chopped)
  8. Salt    to taste
  9. Oil    1-2 tbsp
  10. Cumin seeds    1/2 tsp
  11. Turmeric Powder    1/4 tsp
To Roast n Grind
  1. Oil    few drops
  2. Dry Red chilli      2 no.s
  3. Coriander seeds    1 tsp
  4. Cumin seeds    1 tsp
Method
  • Heat few drops oil in a pan, add red chili,cumin seeds n coriander seeds roast for a minute, cool and grind it a coarse powder n keep ready.
  • Cook rice and spread it in a wide plate/bowl and allow to cool completely.
  • Heat oil in a large skillet, add ground masala and cumin seeds wait till it splutter and add onions and capsicum and saute till it turns translucent.
  • Then add carrots and turmeric powder,saute for a minute.
  • After that add tomatoes and peas( i used frozen peas) stir well and cook in medium heat till peas get cooked.
  • Now add cooked rice , enough salt and combine the rice gently with the masala n vegs.
  • Lastly add some finely chopped cilantro,turn off the stove and keep rice covered for 2-3 minutes after that open, gently mix well.
  • That's it...Tasty Cumin flavored Rice was ready to serve/pack for your lunch box.
