Adai is nothing but thick dosa/crepes with mixed dals. This is one of the protein packed Nutritious breakfast or dinner recipe. Generally this Adai recipe is done using Raw Rice(pachaiarisi) and bolied rice or Idly rice (puzhungal arisi) but i don't have both so i always use the combination of Sona Masoori n Basmati Rice. This way also adai comes best and tastes so good and i don't find any difference in taste. If u have raw n boiled rice you can use instead sona masoori n basmati rice ratios respectively. Addition of greens to the adai is completely optinal, Murungai keerai is the best green for this Adai. I love adai with murungai keerai, so flavorful, colorful n yummy adai. I am happy that i could get my fav murungai keerai often in Indian Groceries. But now they reduced the quantity, the amount u seen in the below step wise picture was $1 :( Still happy that its available for one dollar. My H bought two packets of drumstick leaves one packet i used to make Adai and another to my Bisi bela bath. Have u ever tried murungaikerrai/drumstick leaves in bisibela bhath? if not try it next time when u find. That also a very yummy and super dish. But couldn't take picture as it was a very dark n cloudy day. For this Adai also, i ground the batter evening itself for dinner and took the dosa picture next day morning. This chill winter weather makes my hands dry n crack more, that too with excessive hand washing got more cracks n bleed. Sometimes i really hate to take stepwise pictures :( So i couldn't take detailed / proper step wise pictures will update it soon.The recipe as follows...

- Sona Masoori 1 and 1/2 cup
- Basmati Rice 1/2 cup
- Tuvar dal 1/2 cup
- Chana dal 1/2 cup + 3 tbsp
- Moong dal 2 tbsp
- Urad dal 1 tbsp
- Methi seeds 1/2 tsp
- Dry Red chillies 8-10 no.s
- Cumin seeds/Jeera 1 tbsp
- Fennel seeds 1/2 tbsp
- Garlic 1 clove
- Salt to taste
- Murungai keerai 1 fist ful
- Carrots 1 small (shredded)
- Onion 1 small (finely chopped)
- Ginger 1 tbsp(finely chopped)
- Hing 1/4 tsp
- Cilantro/curry leaves few finely chopped
- Wash and Soak rice n dals together along with red chillies for at least 4-5 hours .
- After that, drain water and grind it along with cumin seeds, fennel seeds, and garlic to a coarse batter using little water.
- The batter should be thicker than the idly batter. No need to ferment the batter.
- If u are serving for dinner means can grind the batter by evening itself (6pm) and have dinner by 8(pm).
- Then to the batter, add finely chopped onions, drumstick leaves, ginger n shredded carrots n salt.
- Mix everything well and the batter is ready to use.
- Now Heat a tawa,pour a ladleful of batter to the tawa and spread lightly in circular motion.
- This will be a thicker dosa.Drizzle some oil around the dosa and cook in medium flame.
- After 2-3 minutes turn other side and cook till it become little crispy and well cooked.
- It will take time to cook completely.
- Then remove from the tawa and serve hot with chutney or sambar or it can be taken as such with Idly
- podi.
Adai looks so inviting, lucky, U get murungakeerai, we don't get it here, very tempting

Deletesona masoori, one of rice variety...available in all Indian stores...we use that for daily cooking. i dunno whether its boiled or raw rice..its mentioned as sona masoori only.Even i use the same rice for idly also...
It is my fav recipe sangee. In the first week itself prepared it and enjoyed it here. You should be happy atleast you are getting murungaikeerai. I ate only in the last week after a year.

ReplyDeleteThis sounds very much like my moms adai which she used to make at least once every week.Such a lovely way to get your little ones have their protein,calcium and iron.Sangee have you tried using kitchen gloves while washing veggies and cooking (this may keep your hands from more drying).Hope you are feeling fine now.
ReplyDeleteyeah Vidhya, i used gloves but i wasn't comfortable with that...when i take step wise pictures while cooking i have to wash my hands more often n wipe with towel (to handle my camera)this removes all moisture n at the end of cooking i feel burning like sensation :( so sometimes i really irritated to take step wise pictures...
