Day 4 of Blogging Marathon Under the theme "Whole grain dishes" and today's recipe , sweet Payasam with cracked wheat n sweet corn. This is my another successful experiment :) I listed down the wholegrains in pantry - whole wheat flour,brown rice,cracked wheat, whole grain pasta,Ragi.Corn n other legumes. I planned to make recipes with these ingredients and in the row today coming "Cracked Wheat Sweet corn Payasam". I tried this payasam similar to my kids' favorite Moongdal Payasam/Pasiparuppu Payasam. It tasted divine and i am so so happy with the experiment. Now to the recipe...

Ingredients
- Cracked wheat 1/2 cup
- Sweet corn kernels 1/2 cup
- Jaggery 1 cup(powdered)
- Milk 3/4 cup( at room temperature)
- Water 1and 3/4 cups
- Salt a pinch
- Coconut 2tbsp (chopped in to fine bits)
- Cardamom 4-5(crushed finely)
- Cashew nut 1 small handful(roasted in ghee/oil)
- Almond/Badam 10no.s(blanched n chopped)
- In a small vessel, add jaggery n 1-2 tbsp water and bring it to boil n dissolve completely...then filter the jaggery syrup using tea filter n keep aside until use.
- In a microwave safe bowl,add corn n little water and microwave it for 2 minutes..then allow to cool n grind it to a coarse paste n keep aside until use.
- Take non-stick or heavy bottomed vessel, add water ,pinch of salt n bring it to boil...once it starts boiling add cracked wheat and cook till it done.
- Then add cooked sweet corn paste and mix well and cook for another 2-3 minutes.
- After that, add jaggery syrup,stir well and cook for 3-4 minutes or until raw smell of jaggery leaves.
- Now add coconut pieces combine well and its time to add crushed cardamom.
- Then add milk and stir gently and cook for another 2 minutes and remove from stove.
- And add roasted cashew nuts n blanched almonds and mix well.
- That's it...Delicious Cracked Wheat Sweet Corn Payasam ready.
- Serve hot or chilled,both way it tastes divine.

Looks heavenly Sangee. It must be such a satisfying payasam with sweetness from jaggery and corn and the little small bites from the broken wheat. Can't take my mind from the delicious taste. Super idea!!!
