I am so excited to write my 400th post today with a very delicious sweet, Sandesh. A very simple yet Yummy sweet made out of Paneer. First, My heartfelt thanks to all my readers and fellow bloggers who constantly supporting and encouraging me. Without all your boosting comments i cannot reach this position in short period. Thanks n Thanks a ton for everything you showed to me till date and hope you will continue forever :) As i said in my previous posts,blogging had changed my life n taught me so many new n unknown things/recipes n so on. And the most special thing to mention, I got so many friends...some of them are really very very close to me n i use to think about them in my daily life for some reason n they become a part of my life. Really I am so lucky and proud to be a part of this blogging world.
Now coming to the recipe, actually i wanted to make some special cake for this occasion but because of my health issue i don't want to strain much but at the same time wanted to share a sweet recipe. Then came to remember about Radhika's recent post on Kesar Sandesh and decided to give it a try. And also i checked Sharmi's recipe . Both of them have presented it beautifully with step wise pictures. I was so much impressed n done it in my way. I did not use chopped nuts to garnish. Mine didn't get the perfect smooth texture because of the coarse grinding of paneer. Otherwise everything was ok and it tasted so yummy. My kids loved it very much.

- Milk 1 litre/4 cups ( i used 2% milk)
- Lemon Juice 1 tbsp
- Sugar 8tbsp
- Cardamom 1no.
- Saffron 2-3 strands
Method
- Boil milk in a heavy bottomed vessel, once it starts boiling take 2-3 tsp of milk in a bowl add saffron strands n keep aside.
- Then add lemon juice stir well and wait till the millk curdles completely.
- After that, line a a vessel with muslin cloth then pour the curdled milk and tie the cloth n hang it for 30-45minutes to drain completely.
- Then take the paneer in the muslin cloth n keep in colander and wash well with cold water to remove the citrus flavor and squeeze out the excess water.
- And now the chenna/paneer is ready to proceed.
- Take a blender, add sugar n cardamom run for few seconds then add paneer,saffron milk and blend comepletely to a smooth creamy paste. (becoz of my blender i couldn't make a smooth creamy paste).
- And now heat a non stick pan, add the ground paneer paste and cook for 8-10 minutes byt stirring constantly.
- Once the paneer start rolling the sides of the pan, swtich off the stove n remove from heat.
- Allow to cool for a while then start shaping/moulding to desired shapes n sizes.
- If u want, garnish with some chopped nuts and allow to cool completely. Once it cools down it gets harden n resembles like pedas.
- Chilled/Refrigerated Sandesh tasted so yummy.
