Sprouted Peas Paratha / Peas Paratha / Stuffed Peas Paratha

Stuffed Parathas are always hit with my kids, so once in 10 days i make stuffed parathas n this time made with sprouted peas. I had already posted Paneer Peas Paratha with fresh peas n paneer. This time with dried peas. Actually i soaked to make it for Saturday Lunch n thought to click on the same day but this weekend was rainy, cloudy and i couldn't get sufficient light to take pics, so kept soaking for 2 days  i just washed n replaced the water for every 8 -10 hours. At the end of 2nd day the peas started sprouting beautifully and also it was a shiny day. Then without any second thought i proceeded and parathas tasted so yumm n overall its very nutritious n delicious with Carrot Raitha. U can't eat not more than 2 parathas, it was filling so its good choice for dieting and as its made with whole wheat flour its a fiber n protein rich, complex carb meal. Now to the recipe...

Ingredients
For Dough
  1. Whloe wheat flour        2 and 1/2 cups
  2. Salt        to taste
  3. Water      as needed
  4. Oil      1-2 tsp
Take a mixing bowl,add flour and salt mix well. Using water make it to to smooth dough,then add oil and knead for a minute and cover it and keep aside for at least 30 minutes.

For Peas Stuffing / Filling
  1. Peas            1 cup (soaked overnight) 
  2. Onion       1/2 of a medium sized onion  (finely Chopped)
  3. Green chillies      1 no.
  4. Ginger          1" large piece
  5. Coriander leaves     3-4 sprigs 
  6. Cumin seeds       1 tsp
  7. Garam masala     1/2 tsp
  8. Chili Powder       1/2 tsp
  9. Turmeric powder     1/8 tsp
  10. Salt         to taste
  11. Oil            2 tsp
For sprouts, soak Peas in water for over night, after that drain all water and wrap with clean n Wet kitchen towel. Let it be for at least 24 hours, then the peas will be sprouted beautifully.
Or simply soak it in water for more than 48 hours, after 10 hours just change water n add less water or just equal to the peas level...then u will able to see the pea sprouts.

Method
  • Cook sprouted peas with enough water  till it tender n cooked well but not too mushy.
  • Then in a blender, put green chilli, ginger, coriander leaves and cooked peas..grind it to a little coarse paste with little water and keep aside.
  • Heat a oil in a pan, add cumin seeds when it splutter add finely chopped onions and saute nicely till turn golden brown.
  • Then add the ground peas and saute for 1-2 minutes.
  • After that add all dry powders and enough salt mix well and fry for a minute.
  • Lastly add some more chopped coriander leaves and mix well and turn off the stove.
  • Once it cool down completely, start preparing parathas.
  • Knead the resting dough for few seconds and divide the dough into 8-10 ping pong sized ballls n the peas filling in to lemon sized 8-10 balls, take one dough ball,and roll it to 3" (dia ) and keep 1 peas filling and seal the edges together and again gently roll it like regular chapathi (with less pressure). Do the same for the remaining dough n filling.
  • Heat a tawa/griddle, toast the parathas on both sides till turn light golden brown...drizzle some oil on n around the parathas.
  • After that remove from the tawa, Sprouted Peas Paratha is ready and serve hot with pickle or raitha.
Notes:
Instead of dried peas, you can also make this paratha with fresh or frozen peas.
Adjust spices to your taste.
Instead whole wheat flour, you can also use 1 cup all purpose flour n 1 and 1/2 cups whole wheat flour.
