Cooking With Onion is my theme For the 3rd week of BM n for day 1 am going to share Bhendi Do Pyaaz . When Valli announced this theme, very first recipe came to my mind was "do Pyaaz " which means cooking with double the addition of onions or more onions. Generally I love adding more onions to my cooking that too for dry curry, poriyals n stir fry too. This time tried Do Pyaaz with Bhendi/Okra. And it turned out so flavorful n delicious. Remember the tip given by my sister, adding yogurt/curd to any okra dry sauté gives nice taste n sliminess free okra fry/curry. So tried that too, over all Bhendi Do Pyaaz came out so well n tasted delicious. Sure a great combo with Rotis or even with Rice n Dal Tadka. Now to the recipe...
Ingredients
- Bhendi/Okra 1 lb or 1/2 kg
- Onion 2 medium (thinly striped)
- Garlic 4 fat cloves(finely chopped)
- Turmeric Powder 1/4 tsp
- Red chili powder 1 tsp
- Cumin Powder 1/2 tsp
- Coriander Powder 1 and 1/2 tsp
- Yogurt / Curd 1 and 1/2 tsp
- Salt to taste
- Cilantro few finely chopped
To Wet Grind

Notes:
Adding yogurt is optional but sure it gives nice taste n texture.
Yogurt/curd can be replaced with 1/4 tsp amchur powder.
For extra flavor, u can also add 1/2-1tsp sambar powder along with other dry powders.
Instead of garlic, ginger garlic paste can be added.

- Onion 1/2 medium
- Fennel seeds 1/2 tsp
- Oil 1/2 tbsp
- Cumin seeds 1/2 tsp
Method
- First grind onion n fennel seeds to a little coarse paste and keep aside.
- Wash,wipe with cloth/paper towel n cut okra/bhendi in to desired size n shape, then apply few drops of oil to a microwave safe plate and arrange cut okra and microwave cook it for 21/2 or 3 minutes in high power.
- Once done allow to cool for a while.
- Now heat oil in a pan/wok, add the tempering ingredients and wait till it splutter then add garlic n let it sizzle.
- After that add ground onion-fennel paste and saute for 2-3 minutes or until raw smell leaves.
- Then add sliced onions, sprinkle little salt and saute for 2 minutes, and now add okra/bhendi n turmeric powder and stir fry for 1-2 minutes.
- Next add yogurt and stir well and cook in medium heat(without closing the pan) until the curd gets dries up.
- And now add all dry powders stir fry for 1-2 minutes in medium heat.
- Lastly add some finely chopped cilantro and turn off the stove.
- That's it...Tasty Bhendi Do Pyaaz ready. Serve as an accompaniment with rotis/rice n dal.
