Onion Masala Buns / Onion Khara Buns

Happy Vinayagar Chaturthi Wishes to all my friends n readers. May The Lord Ganesha Bless u with all Health & Prosperity. Hope some of you had a wonderful festival n some still enjoying the special occasion with friends n family sharing all delicious Prasad :) I am still getting ready for the pooja, planned everything for evening. So today bit busy with other things, not in a mood to blog but have to post for the final day of blogging Marathon. As I prepared the recipe in advance its now easy for me to simply write the recipe and post. Onion Masala Buns is more or less similar to Khara Buns/Savory Buns in taste, with the addition of more onions but this is really more soft like my Garlic Buns since I followed the same recipe.

This recipe is slightly adapted from Gauri's Masala Bread recipe. Thanks Gauri for the recipe/idea it turned out so delicious and we enjoyed it a lot. These buns are great for tea time snack, even it tastes good when dipped in hot tea/coffee. Do give it a try n let me know how it turned out. Now off to the recipe.

Ingredients
  1. Whole Wheat Flour     2 cups
  2. All Purpose Flour/APF    1 cup
  3. Rapid Rise Yeast      3 tsp
  4. Salt      1/2 tsp
  5. Baking powder       1/2 tsp
  6. Sugar            2 tbsp
  7. Milk       1 and 1/4 cup(Luke warm milk)
  8. Oil      2 and 1/2 tbsp
  9. Onion      1 medium (finely chopped)
  10. Green chili    1 or 2 no.(finely chopped -optional)
  11. Garlic      3 cloves(finely chopped)
  12. Cumin seeds     2 tsp
  13. Cilantro       1 tbsp + 1/2 tbsp for garnishing
  14. Thinly sliced onions     3 tbsp for garnishing
  15. Chili powder/Paprika     1/2 tsp or less for garnishing

Method
  • In a medium sized bowl, mix warm milk, sugar n  yeast and allow to rest for 10 minutes or until it tunrs frothy.
  • Meanwhile, in another bowl, mix whole wheat flour, APF,salt,baking powder and stir well and keep ready.
  • Once the yeast mixture turns frothy, add oil and mix it then add the prepared flour mixture.
  • Now add finely chopped onions,cilantro,garlic n cumin seeds, mix everything well and now the dough turns to be a very sticky dough.

  • Grease your hands with oil, and on a well floured surface knead the dough for 3-4 minutes to a smooth n pliable dough.
  • Now grease the bowl with 1/2 tsp oil and keep the kneaded dough n smear few more drops of oil in top of the dough and cover the bowl with damp cloth or cling wrap and rest it for 1 hour or until it doubles in size.
  • Meanwhile grease or line a baking tray with oil/cooking spray and keep ready.
  • Once it has raised in its size, punch down the dough and knead for a minute and divide the dough in to 10 big lemon sized balls and arrange it on a lined baking tray by 2" apart.
  • Then allow this to raise for 20 minutes, 
  • Preheat oven to 400 degree Fahrenheit.
  • once done brush the top with milk or egg wash and sprinkle sliced onions n chili powder and chopped cilantro and bake it for 15-20 miutes or until the top turns golden brown, when u tap the top of buns u hear the hollow sound then its done.

Notes:
U can make this buns either using whole wheat flour alone or APF alone.
I used egg wash( one egg + 2 tbsp Milk mixed together n used for brushing).
These buns are so soft n u can also enjoy it with some Pav bhaji masala.

  19. I tried making these, but it did not come out well. the dough was too watery,may be due to water content in onions or corrainder leaves after washing them. I was wondering if sauteing the onions would help?

    1. yes.,it may be due to excess moisture.,next time try with sauteed onions. or try to reduce the quantity, instead of 1 medium onion, use 1 small onion.
