Aloo Gobi Masala Rice / Baked Potato Cauliflower Masala Rice


Only one day to go for long weekend, but I got the Holiday mood early this Monday itself and not interested in cooking and blogging. Just spending hours by simply sitting with my Tab, playing games, browsing, FB this n that...Actually i planned to make some Thanks Giving Recipes - Appetizers, Main course,Desserts etc but i couldn't do anything :( At least will try to come up with some Christmas recipes. 
Now coming to today's recipe, Aloo Gobi Masala Rice - this is more Tasty and flavorful than Biryani but with very simple process and less calorie too.
Only the ingredients list and method looks like long process but this recipe is very simple and Any one can cook it in no time except the Baking time. I baked the Masala coated Aloo & Gobi but u can even toast in tawa or shallow fry them. As i said earlier, i was so lazy to saute so simply spread it on a tray and baked them. These baked Masala Aloo Gobi can be served as a appetizer or snacks along with fav sauce/ketchup. They tasted awesome and half of them were gone before making rice as i couldn't stop myself from munching those spicy, yummy n crisp aloo n gobi. Even My kids too loved this Masala rice along with Onion Raita. No special side dish required as the rice is already mixed with masala coated vegetables so simple raitha or some boiled eggs is enough. Now off to the recipe...
Ingredients
  1. Cooked Rice         2 1/2 cups
  2. Onion        2 large (julienned)
  3. Tomato      1 no.
  4. Green Peas      less than 1/4 cup (fresh or frozen - optional)
  5. Green chili       2 no. (slit open)
  6. Ginger Garlic paste     1 tsp
  7. Cilantro            tbsp finely chopped
  8. Turmeric Powder     1/8 tsp
  9. Cumin Powder      1/4 tsp
  10. Garam Masala Powder     1/4 tsp
  11. Kashmiri Chili Powder     1/4 tsp
  12. Salt      to taste
To Temper
  1. Oil       1 tbsp
  2. Clove     2 no.
  3. Cinnamon      1" stick
  4. Cardamom     2 no.
  5. Cumin seeds/Jeera     1/4 tsp
  6. Fennel seeds/sombu    1/4 tsp
For Masala Aloo Gobi
  1. Aloo/Potato      4 medium
  2. Gobi/Cauliflower Florets     2 cups
  3. Ginger Garlic Paste        1 tbsp
  4. Kashmiri Chili Powder      1 tsp
  5. Turmeric Powder       1/4 tsp
  6. Cumin Powder       1/2 tsp
  7. Garam Masala Powder     1/2 tsp
  8. Pepper / Freshly Ground Pepper      to taste
  9. Salt        1/2 tsp
  10. Corn Flour        1 tbsp
  11. Lime Juice       1/2 tsp
  12. Olive Oil         1 tbsp + 1 tsp to grease the liner or can use any cooking spray.
Method
  • Wash Potatoes in running water, peel the skin and par boil it or just boil for 7-10 minutes and drain it and cut into desired shape n size and keep ready.
  • Wash cauliflower florets, drain well and cook it in microwave for 2 minutes without adding water, if u want just sprinkle little water, after two minutes pat dry the florets using clean towel/ paper towel to remove excess moisture.
  • Preheat  Oven to 300 degree Fahrenheit.
  • Now in a mixing bowl add par boiled potato, cauliflower and add other masala ingredients from "Ginger garlic paste-Olive oil" (ingredients in 3rd tab) and mix everything well.
  • Then line a baking tray with aluminum foil, spray it with cooking spray or grease it with oil and 
  • spread the masala coated aloo, gobi / Potato n cauliflower and bake it for 20-25 minutes or until it turns crisp n cooked.
  • Once done remove from the oven and let it cool for a while and then transfer it to a bowl/plate and keep aside.
  • Now heat oil in a kadai/pan, add the tempering ingredients and wait till it splutter.
  • Then add onions n green chili, saute it to a minute after that add ginger garlic paste and saute till raw smell leaves.
  • And add chopped tomato, turmeric powder and saute it for 1 minute and add all dry powders(cumin,chili n garam masala powder) and stir fry for 2 -3 minutes.
  • After that add cooked rice, enough salt and give a nice stir. 
  • Now its time to add baked masala aloo n gobi, then give a gentle stir and cook covered for a minute.
  • Lastly add some chopped cilantro and turn off the stove.
  • That's it...Tasty and Flavorful Aloo Gobi Masala Rice Ready. Serve Hot with Raitha.

Notes:
As i have used Kshmiri Red chili powder, the rice wasn't spicy, its very mild, if u want to hot n spicy u can use plain red chili powder or can increase the no. of green chili.
If using peas, just add it along with tomato and saute it.
U can use any desired vegetables, adding fresh mint leaves along with cilantro will also gives u nice flavor n taste to the rice.
Instead of lime juice ( in masala mixture) u can also use 1 tbsp to tomato puree or tomato sauce.
If u don'y like microwave cooking, simply use blanched cauliflower florets - bring 2-3 cups of water to boil, then add washed n cut florets leave it for 2 minutes then drain using colander n wash in cold water. Pat dry using towel n then proceed.
If u use raw fresh florets, please do not combine with potato bake it separately since the raw florets has more moisture.
