Wishing Everyone a very Happy Christmas!!! Most of u might be busy in preparing for Christmas Celebration - Baking, Decorating house and cooking for your guests this n that. Me too really loved this year's all festival/special occasion, Yup i cooked few recipes for Diwali & Bakes some cookies n cakes for Christmas and enjoyed eating it with my family :)
Final post on my Christmas recipes, i wanted to share few cookies recipes but becoz of my laziness i couldn't make it in time but sure will try to share here in future. Today's recipe is an Eggless Carrot Cake with chocolate glaze/Ganache. I have already posted the Eggless Carrot cake - Microwave version and this cake from my dear friend Sobha's recipe. So soft, moist and delicious cake and a best recipe ever. Generally Carrot Cake is topped with Cream cheese Frosting or it is served as such. First i thought to bake it as a plain cake with some nuts n raisins. But my lil' one wanted the cake with some cream/frosting. So for a change I paired this Carrot cake with Chocolate Ganache and the recipe is from Joy of Baking. Both are very simple recipe and easy to make.
Ingredients
For Eggless Carrot Cake
- All Purpose Flour 1 cup
- Whole Wheat Flour 1/2 cup
- Sugar 1/2 cup
- Baking Soda 1 tsp
- Baking Powder 1/2 tsp
- Salt a generous pinch(optional, i added)
- Ground Cinnamon 1 tsp
- Grated Carrot 1 and 1/2 cup
- Yogurt 3/4 cup
- Oil 1/2 cup ( i used Extra light olive oil)
- Vanilla 2 tsp
Method
- Preheat oven to 350 degree Fahrenheit. Line 9" round cake with parchment paper and grease baking spray and keep aside.
- In a large mixing bowl, sift flours, baking powder, baking soda, salt, cinnamon and then add sugar and combine everything well.
- To this add grated carrots and stir.
- In another mixing bowl, add beaten yogurt, oil and vanilla essence stir and add it to the dry ingredient/flour mixture and mix everything well.
- Then pour the batter to the lined/greased cake pan and bake for 30-35 minutes or until an inserted tooth pick comes out clean.
- Once done, remove from oven and cool in wire rack and then top with glaze or any desired frosting.
- Semi sweet chocolate/Chocolate chips 6 oz or 1 cup
- Heavy Whipping Cream 3/4 cup
- Unsalted Butter 1 tbsp
- Add chocolate chips cream, and butter in a heatproof bowl.
- Place over a saucepan of simmering water and melt until smooth.
- Remove from heat and let stand at room temperature until it is of pouring consistency.
- Then pour the frosting over the cooled cake. Let stand until frosting has thickened.
- After that slice and serve!
Chocolate Ganache topping is optional, this can be served without topping/frosting.
To the prepared cake batter, u can also stir in with some chopped nuts, dry fruits or raisins.
As i have used 1/2 cup whole wheat four, i felt the dough bit thick, so added 1/4 cup warm water to get the right consistency.
I poured only 3/4 of the prepared ganache and sprinkled with some edible flowered sprinkles.
