Dates Cake / Eggless Dates Cake / Dates Loaf Cake


I know that today there won't be enough sunlight and its not a suitable day to take food pictures, not only today this whole week is going to be too cold, cloudy n gloomy...so don't want to postpone my baking till next week. So proceeded to bake Dates Cake which i recently saw in Vimitha's Space. The cake doesn't contain any egg and butter, its a very simple and healthy dessert too. So without any further delay i tried and it turned out so good, moist, soft n delicious cake with crunchy nuts n chocolate chips bites. Try this Delicious Dates Cake, a healthy choice for this Christmas treat. Sure your friends and family will love this!!!

Ingredients
  1. Whole Wheat flour   1 and 1/4  cup
  2. All Purpose flour      1/4 cup
  3. Baking Soda              2 tsp
  4. Baking Powder          1/4 tsp
  5. Salt                            1/4 tsp
  6. Dates                         20 no.s
  7. Milk                          1 and 1/2 cup
  8. Sugar                         1/2 cup
  9. Oil                             1/2 cup + 2 tbsp
  10. Vanilla                       1/2 tsp
  11. Chopped Nuts & Raisins     1/4 cup
  12. Mini chocolate chips           less than 1/4 cup
Method
  • Preheat oven to 350 degree Fahrenheit. Line a 8" loaf pan with parchment paper n spray some cooking/baking spray and keep aside.
  • In a microwave safe bowl heat 1/2 cup milk for 1 minute and add dates to it and leave it till the dates get soften, after that blend it to a smooth puree along with that milk and keep ready.
  • In a bowl, sift flours, soda, baking powder n salt, combine and keep aside.
  • In another mixing bowl, add milk, sugar stir using whisk until sugar dissolves and then add oil, vanilla and dates puree and mix everything well.
  • To this add flour mixture and mix everything without any lumps.
  • Lastly stir in nuts, raisins and chocolate chips.
  • Now pour the batter to the greased pan and bake it for 35-40 minutes or until an inserted toothpick comes out clean.

Notes:
I have used loaf pan, but u can also bake it in 8" or 9" round cake pan.
U can use completely either All purpose flour or Whole wheat flour.
As my dates are too sweet i used only 1/2 cup sugar for 1 and 1/2 cup flour but the original recipe is, 1/2 cup for 1 cup flour...so adjust according to ur taste...the above mentioned quantity will yield u a perfect sweet cake..not too sweet or less.
U can use any desired nuts, dry fruits, tutty fruity etc.

      Reason for sinking in the middle- there are few major reason for cake sinking - amt of baking soda n baking powder, too much of beating, oven temperature, baking time...to learn in detail plz follow the below link...am also a begginner in baking..just learning...hope the below link helps you to bake next time better...
