Eggless Pear Streusel Coffee Cake - Guest Post By Priya !

As a part of my Blog's Second Anniversary Celebration i asked few of my friends to do a Guest Post. And my dear friends also accepted my request and send their delicious recipes with very kind words about me n my space. I asked them only two weeks back and they are sweet enough to send me their recipes within 2 or 3 days. Thank u friends for all your timely help and for these delicious recipes at my space. And one more in the list, Priya of Priya's Versatile Recipes. Priya is one of the dearest friend which i got through this Blogging. Sometimes we feel some unknown bonding that makes one more close and lovable even if we don't met them personally or very new to us or at first sight or when reading their recipes/journals/stories. I felt such bonding on Priya's Versatile Recipes. Every time i visit her space, after reading the recipe i never commented just like that, rather would love to speak thru my comments. Sometimes the comment turned to a conversation n she replies back to me by commenting on my space :) The relationship was started like that and later became friends on FB and then on one fine day She called me ;-)

After talking over phone really i felt like that we were close friends/sisters for over years. She is such a friendly, jovial and a caring person. We talk more than a hour about so many things, blogging, family, cinema, drama, current topics everything. Even got some useful tips and advice from her :)

Coming to Priya's Versatile Recipes, awww...its a Huge Space with lots n lots of recipes and really some are unique and very innovative recipes. One can find all sorts of recipes like low calorie recipes, kids friendly, fiber rich, diet recipes, sinful delights, yummy appetizers, non vegetarian delights, eggless baking, cakes, muffins n the list is endless. I have tried some of her recipes and even posted few on my space. Never failed or disappointed with her recipes, all were delicious recipes even loved by my kids. Her recent French Chocolate King Cake & Vanilla Yule Log cake with Mascarpone Cheese was my most fav of all and wanted to try it soon. Her Today's recipe is also very interesting and new combo to me, Pear Streusel Coffee Cake. Haven't tasted pear cakes, let me try sometime.

Am very much excited when Sangee asked me to make a guest post for her, who can miss this wonderful opportunity. Sangee, a wonderful,very friendly and down to earth person,actually we never met personally but virtually we are great friends i must say here. We started chitchatting through FB and a day i pinged her asking her fone number, she was kind enough and gave me her fone number. From that day onwards we call quite often and talk over for hours.Our conversations starts mostly with our respective blogs.

She is not only a friendly person, she is also a versatile cook, great photographer and a wonderful follower, she never failed to post her fabulous comments in my space. She is a honest person who never hesitate a second to appreciate your work and love her dedication towards her space even she is a busy mom of two lil dumplings. Sometimes her words makes me really happy and am truly blessed to met her through this fabulous virtual world. Thanks Sangee for giving me a chance for this guest post for your blog anniversary celebration.

I know i'll be preparing a cake for her, initially i wanted to make a rich fudge chocolate cake but finally i decided to make a flavorful  eggless streusel coffee cake with pears. Streusel is a crumb topping prepared usually with butter,flour and sugar,even muffins,breads or pies can be prepared with this streusel topping even though my choice went for a pears coffee cake. I spiced my streusel topping with cinnamon powder while some goes for a mixture of cinnamon and nutmeg or else for coconut,just mix and match the spices of your choice.

I prepared a eggless, butter free coffee cake for making this streusel cake to reduce the fat content of the cake.But i couldnt skip the butter for making my streusel as butter plays an important role for this incredible crumb topping,else this cake turned out super light,tasty,fantabulous with a wonderful beautiful crumb. Enjoy this eggless pear streusel coffee cake.

Cake:
1+3/4cups All purpose flour
1/4 cup Cornflour
2 tsp Baking powder
1 tsp Baking soda
3/4 cup Sugar
1 cup Yogurt
1/2 cup Oil
1 tbsp Instant Coffee powder
1/2 tsp Coffee extract or vanilla extract

3 nos Firm pears (peeled,cored & sliced thinly)
1 tbsp Freshly squeezed lemon juice

Streusel Topping:
1/2 cup All purpose flour
1/2 cup Light Brown sugar
1 tsp Cinnamon powder
4 tbsp Unsalted Butter (chilled & cut into small pieces)

Combine the flour,sugar,cinnamon powder in a bowl and stir well.

Add the butter and rub with the fingertips until the mixture resembles as coarse meal and keep aside.

Toss the sliced pears with lemon juice and keep aside.

Preheat the oven to 350F.

Beat the yogurt and sugar until the sugar gets dissolved.

Meanwhile sieve the flours and keep aside.

Now add the baking powder and baking soda to the yogurt mixture,mix it and keep aside for 5 minutes.This mixture will starts bubbling.

Add the flours,oil,coffee powder, coffee extract and mix the batter with a spatula until everything gets well mixed, don't over mix the batter.

Transfer this cake batter to the greased round springform mould, now gently arrange the already sliced pears over the batter.

Top it with the streusel toppings, bake in middle rack of the oven for 40-45 minutes or until a skewer inserted comes out clean.

Let the cake gets cool completely.

Dust the top of the cake with confectioner's sugar.

Slice and serve with your choice of drink and enjoy.
