During my Knee treatment i was not able to walk, cook or do any work by own, that time H managed to cook and took care of me n my kids. But sometimes he wasn't able to cook due to his work pressure and that time we have managed with some bread, fruits & with some ready stuffs like frozen parathas n store bought idli/dosa batter etc. Once He bought two packets of Haldiram's Frozen parathas - Gobi Paratha & Mix Vef Paratha. Both Parathas tasted so good and i liked the mixed Veg Paratha. Its a combo of mixed vegetables - aloo,gobi,peas,carrots and with Paneer. Method

Ingredients
For Dough
- Whloe wheat flour 2 and 1/2 cups
- Salt to taste
- Water as needed
- Oil 1-2 tsp
For Mix Veg Paneer Stuffing
- Potato/Aloo 2 medium sized
- Peas 1/4 cup (fresh or Frozen)
- Carrot 1 no. (shredded)
- Cauliflower 1/2 cup (shredded)
- Paneer 1/2 cup (shredded)
- Onion 1 small or less than 1/4 cup finely chopped
- Ginger 1 tsp (finely chopped)
- Cilantro 2 tbsp (finely chopped)
- Turmeric powder a generous pinch
- Chili Powder 1 tsp
- Garam Masala Powder 1/2 tsp
- Cumin Powder 1/2 tsp
- Salt to taste
- Cumin seeds 1/4 tsp
- Oil 2 tsp
Method
- First boil potatoes and peas till soft n cooked, then peel skin from potatoes and mash it along with peas n keep aside.
- Wash n shred carrots n also Grate/shred paneer and keep ready.
- Wash and Shred cauliflower then microwave for 60 seconds n keep ready.
- Heat oil in a pan, add cumin seeds when it splutter add ginger n onions and saute for a minute.
- Then add mashed potato n peas, shredded carrots n cauliflower along with turmeric powder n stir fry for minute.
- Now add all dry powder - chili, cumin n garam masala powder and enough salt and stir for 1-2 minutes.
- After that add paneer and stir fry for few seconds and lastly add finely chopped cilantro and turn off the stove.
- That;s it..Mixed Veg Paneer stuffing ready, allow this mixture to cool for while.
- Once it cool down completely, start preparing parathas.
- How to make Mixed Veg Paneer Stuffed Paratha..
- Knead the resting dough for few seconds and divide the dough into 8-10 ping pong sized ballls n the mix veg filling in to lemon sized 8-10 balls, take one dough ball,and roll it to 3" (dia ) and keep 1 mixed veg filling and seal the edges together and roll it to a smooth ball(like in the pic) and then gently roll it like regular chapathi (with less pressure). Do the same for the remaining dough n filling.
- Heat a tawa/griddle, toast the parathas on both sides till turn light golden brown...drizzle some oil on n around the parathas.
- After that remove from the tawa, Mixed Veg Paratha is ready and serve hot with pickle or plain beaten Yogurt/curd.
Notes:
Adjust spices according to your taste and u can also substitute garam masala with curry masala powder, pav bhaji masala or any desired masala powder.
And u can also add a pinch of amchur powder along with other spice powders.
Chili powder can be replaced with green chili paste but add it along with onions and saute it.
Parathas can be made ahead and while serving just toast it on hot tawa for few seconds and serve.
I made this paratha by evening itself and for dinner i toasted again and served, that parathas were soft n tasted so good.
U can use any combo of vegetables but try it along with paneer for more tasty n filling parathas.
This is perfect for lunch box too, make parathas while its warm spread butter or ghee or ketchup which ever ur kids love then roll and pack for your kids lunch box.
