Spicy Treats turns two today, am so excited and can't believe that my lil' space successfully completed two years and entering in to another New Year of Blogging with more hopes. I have no words to express the joy, though the journey was short, the happiness which i got through this was more - completely changed my life, got to know more interesting things around world, more good friends and little recognition for my hard work and passion.
I am most thankful to my H who is really supportive got new SLR camera for me and whenever i need to buy props without asking any questions allowed me to buy whichever things i want and never failed to appreciate my work. And my kids who are the master brain behind my many innovation, Only becoz of them i tried more new recipes. Last but not the least, my strongest strength and energy of my space, my blogger friends and each and every single visitor of Spicy Treats. Without their support, encouragement, suggestions and boosting comments i couldn't able to come so far. Thanks a ton from the bottom of my heart and hope u will extend the same in the future coming years also :)
And special thanks to Sobha, Julie, Vardhini and Priya for doing lovely Guest Post here. I loved reading your recipe with all those special mentions :) Thank u friends.
So more special recipes are coming on its way and i look forward to see many such happy moments here with all your Love & Support!!!
Now coming to today's special recipe, Molten-Centered Chocolate Cupcakes. These cupcakes are similar to Molten Lava except these cupcakes baked with chocolates chunks. Chocolate chunks packed inside these cupcakes produce an irresistible molten-chocolate center, and they are served warm so that the chocolate really does melt in your mouth. And also these cupcakes are easy to make with simple ingredients and are so rich, flavorful and delicious. So here's a simple chocolate Treat to U all for Spicy Treats' 2nd Birthday :)
Recipe Source : From the book, "Cupcakes" by Susanna Tee
Makes about 6 cupcakes
Ingredients
- Self Rising Flour 1/2 cup + 2 tbsp*
- Unsweetened Cocoa 1 tbsp
- Butter / Margarine 4 tbsp (softened or at room temperature)
- Superfine sugar 1/4 cup
- Egg 1 no.
- Milk 2 tbsp
- Semi Sweet Chocolate 2 oz
Method
- Preheat oven to 375 degree Fahrenheit. Line paper baking cases in a muffin pan and keep aside.
- In a bowl, add butter, sugar, egg, flour and cocoa and using an electric hand whisk beat together until just smooth.
- Spoon half of the batter into the paper cases. Using a teaspoon, make an indentation in the center of cake cake. Break the chocolate evenly into 6 squares and place in each indentation, then spoon the remaining batter on top.
- Bake the cupcakes in the preheated oven for 20 minutes or until well risen and spring to touch.(mine took exactly 20 minutes).
- Leave the cupcakes for 3-4 minutes and serve warm.
Notes:
* Self Rising Flour - If u don't have self rising flour in hand, don't worry, in bowl add 1 cup of all purpose flour, 1 and 1/2 tsp Baking powder and 1/2 tsp salt. Mix everything well and use it in recipe.
The original recipe doesn't have milk, but i felt the batter was too thick so i added 2 tbsp milk and was ok with the result too.
U can also use dark chocolate or white chocolate instead semi sweet chocolate.
Serve warm, if u want u can also dust the cupcakes with confectioners' sugar.

ReplyDeleteHi Sangeetha. I made these today but since I am a vegetarian I omitted the egg. Also, I had to add one fourth cup milk because the flour mixture was dry after I added two tblspns of milk. Thanks for the awesome recipe. :-) by the way this is the first time I am making something from your blog. :-)
ReplyDeleteHi Sangeetha. I made these yummy cupcakes today. Since I am a vegetarian, I omitted the egg. I had to add half cup of milk because two tablespoons made the flour mixture very dry. This is the first recipe that I tried from your blog and plan on trying more. Keep up the great job! :-)
ReplyDeleteThank you Prathima for your feedback, yes.,egg is only wet ingredient if you omit then you have to add equal amount of milk or any egg substitute. Glad that your eggless version turned out good. Keep trying and feel free to share your feedback and suggestions. Thanks again!
