Chicken Pepper Masala / Easy Pepper Chicken / Chicken Pepper Fry

pepper chicken without capsicum
Generally I won't experiment with chicken since am not much fond of chicken or other non vegetarian recipes, i only eat chicken if its made more tasty and spicy. So i always follow the best recipes either from my mom or from good websites...But it's long time wish to try chicken like my Mushroom Pepper Masala. last month tried that recipe with chicken instead of mushroom n to my surprise it turned out so good n even my 3yr old liked the chicken with curd rice :) U too try this yummy n spicy flavorful chicken n impress ur family!

Ingredients
  1. Chicken   1 lb ( i used skinless n boneless thigh chicken)
  2. Onion      1 large (chopped)
  3. Green Bell Pepper      1/2 cup(diced or chopped)
  4. Tomato      1 large (chopped)
  5. Garlic         3 or 4 fat cloves(finely chopped)
  6. Ginger     1 tsp finely chopped
  7. Pepper Powder       2 tbsp ( or adjust to your spice level)
  8. Curry leaves       1 sprig
  9. Green chilli       2 no.s (chopped)
  10. Turmeric powder      1/4 tsp
  11. Coriander powder      1 tsp
  12. Cumin powder          1/2 tsp
  13. Chili Powder    1/2 tsp(optional)
  14. Garam Masala powder    1/4 tsp(optional)
  15. Salt          to taste
  16. Cilantro       4-5 sprigs(finely chopped)
  17. Oil        1 tbsp+1/2 tsp
  18. Fennel seeds     1/2 tsp

Method
  • Cut and wash chicken thoroughly, drain and sprinkle turmeric powder and keep aside.
  • Heat 1/2 tsp oil in a small pan, then stir fry capsicum for 1-2 minutes along with pinch of salt and pepper and transfer to a plate and keep aside.
  • Now heat 1 tbsp oil in a kadai/pan, add fennel seeds allow to splutter then add curry leaves finely chopped garlic, ginger n green chili saute lightly then add 1 tbsp pepper powder and let it sizzle.
  • After that add onions, sprinkle little salt and saute till the onion turns light golden brown(3-4 minutes).
  • Next add tomato and saute till it turns soft n mushy.
  • Now add all the dry powders and stir fry 1-2 minutes(if u want can sprinkle very little water n stir fry well)
  • And then add chicken pieces and stir fry for another 2 minutes and cook covered in medium heat until chicken gets cooked soft n tender.
  • Now add the roasted capsicum and stir fry for another 2 minutes and add remaining 1 tbsp pepper powder and mix everything well.
  • Lastly add finely chopped cilantro and switch off the flame.
  • That's it...hot & spicy Chicken Pepper Masala ready. Serve hot as an accompaniment with rice, Dosa, rotis, Biryani, Pulao.

Notes:
Use freshly ground pepper n and also grind it lil' coarsely.
U can also skip tomato and make it as a dry pepper chicken fry.
The above spices quantity will give a perfect or moderate spice level, i sometimes add 3 tbsp pepper powder and 1 tsp chicken masala powder for even more taste n flavor.
Adding fennel seeds, curry leaves is must for true pepper chicken flavor.
If u want u can skipe capsicum and make it as a plain pepper chicken i have tried that way too...
For vegetarian version, try it with baby potatoes, mushroom, paneer n for vegan option u can try it with Tofu, am planning to recreate this recipe with Tofu :)
