Now coming to the recipe,
Ingredients
- Cumin Seeds/Jeera 2 tbsp
- Tuvar dal/Thuvaram Paruppu 2 tbsp
- Roasted gram dal/Dalia/Pottu kadalai 1/2 cup + 2 tbsp
- Dry Red chilli 4 or 5 no.s
- Pepper corns 1/2 tsp or less
- Curry leaves 1-2 sprig
- Hing 1/4 tsp
- Salt to taste
- Oil 1/2 tsp
Method
- Heat oil in pan, add cumin seeds, pepper corns roast it for few seconds then add curry leaves, dry red chilli, stir it and add tuvar dal and dalia and roast in medium heat till the dal turns light golden brown and flavor comes.
- Lastly add hing stir well and remove from the heat.
- Transfer to a plate, allow to cool this for a while and grind it to a fine coarse powder along with salt.
- That's it...Jeera Paruppu podi ready. Serve with Hot plain rice n ghee/sesame oil as needed.
Notes:
I usually grind chilies n curry leaves first then add dal n other ingredients, so that it get a evenly grind and smooth podi.
Dry roast all the ingredients in medium heat or else it will burn soon n won't be roasted properly.
Finely roasted dal only give nice taste n flavor to the Podi.
As soon as u finish roasting remove the pan from stove top n also transfer the content to a plate/paper or else due to the heat dal will turn black n burnt.
