Hi all, hope u enjoyed your weekend and wishing u a very pleasant n successful week ahead. This week have planned to cook and bake few recipes since for the past 10 days becoz of the weather(gloomy & cloudy) i did not make anything for my blog baby. This week comparatively going to be better than the past days, so decided to cook/bake few recipes. Wish me good luck buddies :)
Now coming to the recipe, this is my recent experiment, so simple and quick chicken fry with freshly ground spices, no need of ready made masalas. For a change tried this with ground spices which turned out so good and liked by my family memebes. This not like Chettinad chicken which is also made using freshly roasted n ground spices and its a lengthy process too, its a very simple n quick fry. Best accompaniment with rice n rasam. Do give it a try n let me know h it turned out to u.
Ingredients
- Boneless chicken 250gm
- Onion 1 medium(finely chopped)
- Tomato 1 small(finely chopped)
- Ginger Garlic paste 2 tsp
- Turmeric powder 1/4 tsp
- Fennel seeds 1/2 tsp
- Garam masala powder 1/4 tsp or less.
- Salt To taste
- Cilantro 2-3 tbsp(finely chopped)
- Curry leaves 1-2 sprig
- Pepper corns 2 tsp(coarsely ground)
- Dry red chilli 3 no.s
- Coriander seeds 1 tbsp
Method
- Cut chicken into small pieces, then wash thoroughly drain excess water and add turmeric powder, mix well and keep aside covered.
- Heat a pan, dry roast chili n coriander seeds then grind it coarsely(see pic 3) and keep aside.
- Heat oil in a pan, add fennel seeds wait till it splutter then add onions, curry leaves and saute till it turns light golden brown.
- Now add ginger garlic paste and stir fry till raw smell leaves.
- Then add chopped tomatoes and saute till it turns soft n mushy.
- After that add freshly ground chilli n coriander seeds and stir fry for a minute.
- Then add chicken and stir fry for 3-4 minutes and cook covered till chicken gets cooked well.
- Lastly add freshly ground pepper, garam masala and stir fry in high heat for 2 minutes, so that the moisture from the chicken drains well n turn as dry chicken fry. Take care not to burn it.
- That's it...spicy chicken fry ready, garnish with cilantro and serve hot as a side dish.
I added a generous pinch of garam masala for extra flavor only, its optional n if u want u can replace with chicken masala powder.
Adding tomato is also optional, u can omit it if u want a dry chicken fry.
In case, instead of tomato marinate the chicken with 1 tbsp fresh thick yogurt along with turmeric powder.
