Today's recipe is interesting and delicious everyone's favorite Biryani using Vermicelli. I love vermicelli, its so easy and cok so fast. And also you can make many variety of recipes with this vermicelli and have experimented few recipes with vermicelli like, Tomato Rice Vermicelli Pulao, Vermicelli Broccoli Biryani, Garlic Methi Mutter Vermicelli. This biryani is also one of my favorite vermicelli recipe which I have already posted and few days took pics to update my archived post. But i couldn't upload any pics to that post, dunno the reason. As its one of the Hit post i don't want to delete it, so today am sharing as a new post with new pics. But this time didn't took step wise pics will update it later. Instead of plain Vermicelli Upma or Khicdi this Biryani is loaded with more vegetables and flavor which sure loved by both kids and adults. Ingredient
- Vermicelli 1 cup
- Mixed vegetables 1 cup chopped(carrot,beans,peas,potato & cauliflower)
- Ginger garlic paste 2 tsp
- Onion 1 medium (sliced)
- Tomato 1 small(chopped)
- Green chilli 3-4 (slit open)
- Curry leaves few
- Mint Leaves from 2-3 sprig
- Coriander leaves/ Cilantro 4-5 strings(chopped)
- turmeric powder a pinch
- Salt as needed
- Oil 1 tbsp
- Fennel seeds 1/2 tsp
- Bay leaf 1-2 small
- Cinnamon 1" stick
- Clove 2 no.s
- Cardamom 2 no.s
Method
- First roast the vermicelli with few drops of oil till golden brown.
- In a vessel add 4-5 cups of water sprinkle some salt and add few drops of oil allow to boil.
- When it start boiling add the roasted vermicelli and cook for only 3 minutes.
- Drain the water and spread it in a plate to cool and keep aside.
- then wash and chop vegetables to desired size and transfer to a microwave safe bowl, sprinkle little water cook in microwave for 2 minutes and keep aside.
- In a pan/wok, heat oil and add fennel seeds,cinnamon,clove and bay leaf..fry well.
- Then add onions and curry leaves sprinkle some salt and keep frying till transparent.
- Now add ginger-garlic paste and saute till raw smell leaves and add chopped tomatoes, mint
- leaves and coriander leaves and stir well.
- When tomatoes get soft and mushy add a pinch of turmeric powder and half cooked vegetables.
- Stir Fry for 2 minutes and then add cooked vermicelli.
- Gently stir fry the vermicelli with vegetables for 1-2 minute and add some more chopped
- coriander leaves and close the pan with lid and simmer for 3-4 minutes. This helps the vermicelli to incorporate all flavors n taste.
- That's it...Vermicelli Vegetable Biryani ready .Serve Hot with Raita.
Do not cook vermicelli for long time, 3-4 minutes is enough or else it will be mushy n u will end up with veg khichdi.
No need to cook the vegetables comepletely, just half cooked or blanched vegs is perfect.
I used bambino vermicelli.
