Now coming to today's recipe, completely a vegan, healthy n yummy side dish using Tofu and Green Peas. I rarely buy/make paneer for kids and mostly use Tofu in place of paneer. Tofu is rich in protein, vegan n low in calories. But Tofu doesn't tastes so good like paneer if u add it as such or plain tofu, so i used to toast/bake it with spices before adding it to the curry, by this way it tastes crisp, spicy n yummy with the curry. Give it a try, u will love it.
Ingredients
For spiced Tofu
- Extra Firm Tofu 14 oz pack
- Red chili powder 1/2 tsp
- Cumin powder 1/4 tsp
- Garam masala 1/4 tsp
- Salt a generous pinch
- Oil 1-2 tsp
- Frozen Peas 1/2 cup
- Onion 1 big (finely chopped)
- Tomato 2 Big or 3 medium sized (finely chopped)
- Ginger Garlic paste 2 tsp
- Coriander leaves few(finely chopped)
- Cashew nuts 5 no.s
- Turmeric powder 1/4 tsp
- Chilli powder 1/2 tsp
- Coriander powder 1 tsp
- Cumin powder 1 tsp
- Kasoori methi/Dried methi leaves 1 tsp
- Salt to taste
- Oil 1 tbsp + 2 tsp
- Cumin seeds 1/2 tsp
Method
For Spiced Tofu- Press Tofu for 30 minutes to remove moisture(like u do for Paneer to set, place tofu in a plate and place another flat bottomed plate n keep some heavy weight material on it, to remove the extra water content) and Cube the tofu.
- In a bowl place tofu pieces sprinkle spice powder and oil, mix it then leave it for 20 minutes.
- After that heat a tawa, smear some oil and toast it till crisp and keep aside.
For Tofu Mutter Masala
- Heat 2 tsp oil in a non stick vessel add broken cashew nuts and fry light golden brown.
- Then add the finely chopped onions, sprinkle some salt and fry till golden brown and add turmeric powder and ginger garlic paste and fry till raw smell leaves.
- Now add the finely chopped tomatoes and saute till it becomes soft and mushy.
- Then turn off the stove and let it cool for few minutes and blend it to a fine paste.
- Again in the same vessel heat another tbsp oil and add cumin seeds let it splutter then add the ground paste (onion-tomato) and saute for few minutes.
- Then add 1 cup of water cumin powder,chilli powder and coriander powder and enough salt mix well
- Let it boil for about 7-8 minutes in a medium flame.
- Then add some kasoori methi (crush it slightly) and add peas to the boiling masala.
- Again let it cook for another 2 minutes till it become little thick .
- Now add roasted Spiced Tofu pieces and chopped coriander leaves and cook for another 2 minutes.
- That's it...Flavorful & Delicious Tofu Mutter Masala Ready. Serve Hot with any Breads/Pulao.
Notes:
With the same recipe/method, instead of tofu u can use paneer also or simply u can make it as a plain mutter masala.
Adjust spices to your taste.
Do not add more cashew nuts, in the end u can also add 1/4 cup of heavy cream/milk if u want your gravy to be rich.
I used fresh ripe roma tomatoes thats y my curry got nice vibrant color without the addition of kashmiri chilli powder.
