We love payasam and i used to make it without fail in all our happy moments n special occasions. But this time on my elder one's birthday couldn't able to make his favorite payasam bcoz of party n other things. So last week again he requested me to make payasam for him. But this time i wanted to try new payasam from my regular Vermicelli payasam & moongdal payasam, then remember about this Carrot Payasam from Divya's Culinary Journey. Her payasam color, look, texture n recipe attracted me more, and also she added vermicelli to carrot payasam which sounds even more interesting n delicious and wanted to try it for long time. finally, last week made this delicious Carrot Payasam and we enjoyed it. Thanks Divya for simple wonderful recipe. Now to the recipe...

- Carrots 2 nos.(Large)
- Vermicelli 2-3tbsp
- Milk 3cups
- Condensed milk 1/4 cup
- Sugar 3tbsp
- Cardamom powder 1/4tsp
- Oil/ghee 1/2 tsp
- Pistachios/any nuts 3-4 tbsp (crushed)
Method
- Peel the carrots, chop and cook with enough water till it gets soft n tender. Once done puree the carrots with the cooked water and keep aside.
- Heat ghee in a pan and add vermicelli and roast till it turns light golden brown and trasnfer to a plate and keep aside.
- Add milk in a heavy bottomed vessel, bring it to boil once it starts boiling add vermicelli and cook for only 3 minutes then add the pureed carrots, mix well.
- Now add condensed milk and sugar and let it simmer for few more minutes.
- Lastly add the cardamom powder & crushed nuts mix well and turn off the heat.
- That's it...Delicious Carrot Payasam ready. Serve warm or cold. It tastes best when served cold.
Notes:
Instead of crushed nuts u can also add ghe roasted nuts & raisins to the payasam.
Few strands of saffron can also be added for more rich & flavor.
Adding vermicelli is optional u can make this as plain carrot kheer/payasam.
Adjust sugar/condesned milk to your sweet level, the above one is a mild sweet payasam.
