Dum Aloo / Baby Potato Curry

Potato/Aloo is one of my family favorite vegetable and that's the reason for lots of potato recipes here. Once in a week i make any recipe may be a simpley potato fry, potato kurma for ildi/dosa, potato masal for rotis or anything using potato. Potato is one quick cooking veg and anything with potato will be a hit with kids n adults too.
A month back bought baby potatoes mainly to make this creamy, spicy n delicious Dum Aloo. There are lots of version for this popular Dum Aloo but this recipe is from one of my Friend. The process n preparation might look as difficult but its really so simple and easy to make. This Dum Aloo goes well with Naan, Phulkas, Chapathi n also with some mild. pulao.
Have tried this recipe many times with regular potatoes and never got time to share it on my space. This time made this with baby potatoes on one fine weekend and took few pitures to share here. But not able to present well since H n kids were urging me to serve them lunch so took few pics in hurry :) 
I served this curry with multi grain rotis n some raita and it was a yummy lunch combo, we loved it. Now off to the recipe..
Ingredients
  1. Baby Potato      15no.s
  2. Tomato Puree    1 cup
  3. Yogurt/curd     1/2 cup(thick yogurt beaten smoothly)
  4. Red Chilli Powder     1/4 tsp
  5. Garam Masala Powder     1/2 tsp
  6. Cumin Powder         1/4 tsp
  7. Salt        to taste
  8. Turmeric Powder      a pinch
  9. Cilantro       2-3 tbsp (finely chopped)
  10. Oil    1/2 tbsp
  11. Cumin Seeds     1/2 tsp
To Saute & Grind
  1. Oil    1 tsp
  2. Onion      1 medium
  3. Dry Red Chilli     3 no.s
  4. Ginger     1" piece
  5. Garlic     2fat cloves(chopped)
To soak & Grind
  1. Almonds     5no.s
  2. Whole Cahsewnut     5no.s

Method
  • First soak nuts in 1/4 cup warm water and keep aside.
  • Wash baby potatoes in running water, then prick all the potatoes using a fork and then soak it in salt water for 20-30 minutes.
  • After than boil the potatoes till tender and 3/4th cooked.
  • And then allow the potatoes to cool for a while, if u want can peel the skin and keep aside
  • Preheat oven to 300degree Fahrenheit and line a baking sheet with greased foil paper.
  • Then arrange the potatoes on the lined baking sheet, drizzle little oil and sprinkle chilli powder(optional) and bake it for 20 minutes or till it turns crisp n well roasted.
  • Meanwhile grind the nuts with water to a smooth paste and keep ready.
  • And heat 1 tsp oil in a pan and add ginger, garlic, red chilli stir well then add onions and saute for 1-2 minutes and allow this to cool completely and grind it to a smooth paste and keep ready.
  • Now heat 1/2 tbsp oil in a kadai, add cumin seeds wait till it splutter then add ground onion-chilli paste and saute till raw smell leaves.
  • After that tomato puree and cook in medium heat till it boils after that add cumin powder and garam masala powder and cook in medium heat for 3-4 minutes or until the masala smell leaves.
  • Now add ground nuts paste and stir well and cook for another 2-3 minutes.
  • Then add beaten yogurt and mix gently and simmer for another 2 minutes and now add the roasted baby potatoes and combine well and cook for another 2 minutes.
  • Lastly add some finely chopped cilantro. That's it rich and delicious Dum Aloo ready.
  • Serve Hot with Naans/Phulkas/Rotis.
